Nice build. I've tried making stuff from pallets. I found that under cyclic loads a lot less than this is going to see, the nails holding the pallet together work themselves loose. So you need to reinforce the pallet with screws. Also, you should add a foot brake. And probably a foot throttle too.

Personally, I like the 'rat rod' look. I think it would look a lot better with holes drilled in the red lever and other metal and bars, rust and corrosion, and a little more 'patina' to it. But still, definitely a great idea! :)
