Ice Cream Recipe with Gelatin
This recipe is unique because it uses gelatin, which helps prevent the ice cream from melting quickly. No need for an ice cream maker or salep!
Ingredients:
60 grams milk
6 grams gelatin powder (1 1/2 tsp)
50 grams of dark chocolate
50 grams milk chocolate
15 grams butter
220 grams of whipped cream
For the Coating:
120 grams of milk chocolate
10 grams of vegetable oil
Instructions:
Prepare the Gelatin and Milk:
Combine the milk and gelatin powder in a heatproof bowl.
Heat the mixture over a double boiler (bain-marie) until the gelatin is completely dissolved. Ensure the milk does not boil, as this will cause it to curdle.
Melt the Chocolates:
Melt the dark chocolate, milk chocolate, and butter together over a double boiler.
It's best to use a mix of dark and milk chocolate for a balanced sweetness.
Combine Mixtures:
Add the milk and gelatin mixture to the melted chocolate and stir until well combined.
Set aside to cool completely.
Whip the Cream:
Remove the whipped cream from the freezer.
Using an electric mixer, whip the cream until it forms stiff peaks.
Mix and Freeze:
Gently fold the cooled chocolate mixture into the whipped cream until smooth and well combined.
Pour the mixture into a mold and freeze for at least 3 hours.
Prepare the Coating:
Melt the milk chocolate with the vegetable oil over a double boiler.
Allow the coating to cool slightly before using.
Serve:
Once the ice cream is set, you can serve it as is or dip it into the chocolate coating for an extra treat.
