I love Gennaro and he is absolutely right about using the bits and bobs in your cupboards, especially in a time like this. People that love food always have basics like onions, garlic, carrots, celery, potatoes kicking about. I'm married to a Spaniard so there is always panceta, chorizo, chickpeas, beans, lentils and rice. Not buying produce regularly and using what's in the house makes us better cooks. It's basically old style Mediterranean cooking. Run out of pasta - make some. Make pizza, it's easy (Gennaro shows you how). Nothing is wasted in Spain and Italy where even stale bread is the basis of a fantastic soup. Recipes like this don't have to be perfect. If you don't have an ingredient chuck something else in. You can see that this soup will be absolutely delicious. Classic Italian dish.

I'm really enjoying these lockdown odds and ends recipes! We had this soup today. The pesto with fresh basil from the herb garden we made with the kids a few weeks ago. Instead of Italian cheese we tried mild cheddar and I was surprised how good it tasted. The soup was delicious and we will add it to our family favorite recipes. Thanks.

I watched this video one time, and got the ingredients out of my refrigerator. I didn’t have everything like I didn’t have the celery. I used bacon.And I didn’t have basil, I used cilantro instead. But I more or less watched the video one more time and while I was watching it, I cup up the vegetables and made the soup. I blitzed the whole thing to make it a purée and I am finishing up the cooking now. This is a wonderful soup!
