After watching your video, I set to work using up some of my lemons. I don’t own a microwave, but had great success using a double boiler. Like you, I put my lemon curd in hot jars. It’s my preferred method. Thank you so much for sharing your delicious recipe.

Made this recipe. Oh my! I had to do a stove top method as I don't keep a microwave and added in some orange zest as I didn't have quite enough lemon zest. So delicious! 😋 Thanks again. Lovely to finally get to meet your beautiful daughter too. You are blessed.

Definitely no scorching this way. Just make sure you only do 45 second bursts of power each time, with a good whisking in between!

Since pandemic lockdown we pay increasingly astronomical prices for produce shipped in from the US and Mexico. The Donald is going to add 25% tariff on our imports as soon as he is 'anointed' in Jan. so I'd better find the lemons now! It helps to know how to 'make-do'. It's the same recipe exactly. But instead of putting it in the microwave you put all the ingredients in a heat proof bowl over the top of a pan of simmering water. The bowl mustn't touch the water or you'll get scrambled eggs! Then just keep stirring all the time until the mixture thickens in the same way. If you want to make lemon tart you could pour the hot mixture into a pre baked pastry case and let it cool before decorating it with blueberries or chocolate... anything you want ☺️
