I've been inundated with comments about my knife being dull, needing to be sharpened or I don't know how to use a knife. My knives are as sharp or sharper than yours. My hands are partially paralyzed and I have major difficulties holding the knife which makes cutting appear to be laborious. Hopefully this will clear things up about my 'dull knives'. Thanks!

I like fried spam and eggs with pan toasted bread. My grandmother would make it for me when I would stay with her. This was the days before running water in the houses. She would get the hand grinder out and if I was good, I could turn the grinder. I'm saying all of this because it brings back many wonderful memories. We also ate a lot of SPAM in the navy. Most of the guys complained, but almost all ate it. The reason I'm responding to this is because so many of you have ridiculous negative comments. It gets to be a competition of idiots not relating to the main topic. I liked the video. I feel inspired to try this, may add some garlic and sage. Those spices go good with pork and lamb. Quit nit-picking (the task of pulling the egg or young form of a louse or other parasitic insect)on the knife.

My history professor was going over his research with the class and shared what he holds to be a strong hypothesis that World War 2 was started and fueled by the introduction and subsequent shortage of SPAM in the Eurasian territories. That both the Germans and Japanese surrendered to the Americans over the Soviets because of knowledge of their strong supply of SPAM. The Italians overthrew fascism for SPAM. Everyone feared that the Communists would deny access to American SPAM. Poland and Hungary hated the Soviet Union because of it.

James, I also like fried eggs and spam on toast, with ketchup drizzled across the top. I grew up eating this regularly for breakfast. Spam has been around for since the first world war (if I'm not mistake) and people have been enjoying it for decades. It tends to be high in sodium, but my mum used to say 'everything in moderation'. I enjoyed watching it being made in this video.

My Step Father was a Marine in WWII- In the South Pacific. His hatred for Spam was Legend! Claims to have eaten it for months on end while in active duty. We would every so often give him a can for his birthday or Christmas(as a gag gift). So every time I see Spam I think of him! LOL

@@zonawatson70when canning use CLEAR GEL instead of cornstarch. After filling jars (leaving 1" headspace) take the handle of a wooden spoon and punch a hole down to the bottom and in the center of each jar. This will help with even heating (no cold spot in middle).

I am old enough to remember what real spam use to taste like. When they changed the recipe I stopped eating it years ago; until now. I have made this twice this month, and there is no comparison between this fresh made spam; and the unknown ingredients in mass produced spam. Absolutely worth the small amount of time it takes to make this. I would never buy spam from any store, at any price; ever again. Thank you for sharing.

You hit the nail on the head! When they changed the ingredients in the early 2000's by adding potato starch, I too was extremely disappointed. It seems that Hormel decided that SPAM needed improvement. Stupid. I called Hormel to complain, and ran around for a few months looking for the old style in supermarkets and was able to accumulate a small supply, but of course it eventually ran out. Now I am stuck eating the inferior recipe. I think I will try this recipe. I guess you can guess I am a bit of a SPAM fanatic:)

Well to be 100% honest it was kinda gross. I don't have a grinder anymore so I used a food processor and ground it as much as I could but I think that may have been part of the problem. The fact I tweaked the recipe might have also been part of the issue.

The bone that the meat is cut from could the base of a bone broth, then the liquid from that bone broth could be used as the salt + sugar + starch curing liquid. This would ensure that the end product has plenty of gelatin from the bone.

My dad loved it...bought a can and cut it in blocks and ate it while watching rugby. His was bought. Imagine I had this recipe he would have spoilt by me making his favourite treat. He loved it because it reminded him of his childhood. In SOUTH AFRICA its called bully beef but nonetheless the same thing! @@bellabreault1992 yes! I vacuum seal it and it’ll stay in the freezer for a long time. If you don’t have a vacuum sealer, wrap it tightly in plastic wrap and then put it in a ziplock bag. It’ll be fine.

The gelatin is not fat and does not come from fat, it comes from the breakdown of collagen fibers liquefying under heat. The most probable reason for there being less in spam sold now is because Hormel is recovering that gelatin for use as a pork flavoring in other products (gravy, pork flavor packets for ramen noodles, etc.).

Gelatin isn't a by-product of fat. it comes from connective tissues (tendons, ligaments,) or bones. The closer the meat is to bone, or if you use meat that's on the bone, you'll get more gelatin.

I ate Spam on occasion growing up, and always enjoyed it with eggs for breakfast. I spent 6 years on Oahu. There was a little place to get food back by the shipyard on Pearl Harbor that introduced me to Spam sandwiches, made with fried egg and cheese. I would eat them for breakfast 2-3 times per week.

@@RC.41 During WWll the US had military bases in Hawaii. A lot of Spam was shipped over there as part of the rations because it was safer and more economical than shipping fresh meat. Because rations in that region were plentiful, some was shared with the locals, who immediately loved it. After the war there was a surplus of the product still on the bases, the military had gone back to standard supply orders as there was no longer a need for tight rationing. The locals benefited once again and a trend was born. Word spread through the islands and soon orders were coming in to the company for large shipments to various islands, and it grew from there. Hawaiians are big on pork products as they have more pigs than cows, so it was only natural that they would take to the product. My father was in the Navy during WWll and had first-hand experiences with this.

No fan of spam am I. No steam or bake or fry. I do not like spam. It's just a sham. It's real ham that deserves a fan like I am. Spam from a can. Or "spam" from a pan It's not what I am. And I am what I am. A fan of ham, not spam, is what really makes the man. The making of spam was really quite glam. A great video slam that's ready to can. I love SPAM, even after they changed the recipe! I tried your recipe, but to be frank, something about it wasn’t quite right for me. Flash forward a few months. Today I made another batch but this time I did not add any sugar and added about a pinch more kosher salt. This did the trick for me, perfect SPAM, jelly and all!!

Wow! Thanks for this ... I just wish my dear father was still alive; he would have absolutely loved this!! When we were kids in Bombay, my Dad used to buy us the Danish or Dutch-made “luncheon meat” cans from sailors who used to smuggle them and bring them from the European countries they sailed to... and we just loved them. Same ingredients as canned spam. It's just cooked different. That's why it looks different. Theirs is put in can and cooked 8k cans per batch. Also less fat is used so it has less calories

Same here. I know dozens of people who refuse to eat the foods they grew up on. Even after I realized how poor we were, beans, rice, potatoes, etc, still tastes good if cooked with love and tasty seasonings.

Thank you for this recipe. I plan to try it as soon as my sister arrives. It wasn't a staple in our diet, but Mom did occasionally buy the canned Spam back in the 50s and sixties and fry it up for sandwiches on weekends and school breaks. Loved it. And I'm looking forward to trying your recipe.

Outstanding brother, I love spam and growing up with my grandma who is no longer with us, made me and my brothers eat canned spam almost everyday back in the early 90s. She loved spam because she grew up during the great depression and grandpa served in WWII

I've done this in mason jars before in the pressure canner. yum. I really like the loaf pan method. My next experiment will be to use my snausage-stuffer to make spamdogs. I"ll serve them with velveeta and miracle whip on wonder buns !

It wouldn't shrink any different from the loaf. Just replace loaf pan with jar and make sure the cooking time is correct. (both for safety of canned meat and for gelatinizing the connective tissues, I'm not sure which would require more time at pressure)

We took this recipe one or two steps further. (it's in the oven now) We 1st did a coarse ground on the pork butt (4 lbs) added 1 lb of ham and a pound of bacon to replace the missing pound of pork then did a med grind then mixed in the water mix and did a fine grind then packed it into the loaf pans. Came to about 1/4" over the top of both pans. If you want to know how it turns out, respond to this comment and I'll let you know tomorrow.

I have watched this video several times and just printed out the recipe. I am going to order the grinder and the Morton Tender Quick from Amazon. I fried Spam just an hour ago and it has so little fat in it anymore it wants to stick to the pan. I have ate Spam all my life, grew up in the 1960s and we ate Spam back then and it was so much better than than the stuff sold today. Can you freeze the loafs? I don't think I can eat that much at once. I was thinking wrap it in plastic wrap then butcher paper like I do all my meat and then freeze. Any other ideas? I don't have a vacuum sealer so thats out.
