Homemade Turkey Gravy
2 turkey legs
7 cups water
2 tablespoons Better than Bullion Chicken Base
1 large onion, chopped
2 stalks of celery, chopped
2 carrots, peeled and sliced
2 garlic cloves, finely minced
2 tablespoons garlic powder
1 1/2 tablespoon Justice (yes it is a spice from Penzeys)
2 teaspoons poultry seasoning
rosemary a few sprigs, bruised
3 bay leaves
Flour
Water
1 teaspoon Kitchen Bouquet
Add all ingredients to a large stock pot. Bring to rolling boil, then reduce to medium heat. Cook two hours. Debone turkey and cut into small pieces. Put back in pan. Get 2 cups stock and strain it through a sieve. Put in medium saucepan. Put the rest of strained vegetables back in with turkey. Taste both to make sure spices are correct. Mix flour in water in a cup. You want the milkshake thickness. Cook over medium heat. Slowly add a little of flour mixture at a time. Mix thoroughly. Constantly stir while adding more flour mixture. Add flour mixture until desired thickness is reached. Add about 1 teaspoon Kitchen Bouquet for coloring. I like a light tan in color. Mix thoroughly. Enjoy!
Bring turkey with stock to boil. Then add noodles and cook noodles until desired doneness. Make sure to taste to make spices are correct. Enjoy!
