I just wanted you to know that at 60 years old I just canned my first batch of 14 pints of raw pack chicken! I thought, go big or go home lol!! It was nerve wracking for me being the first time but I followed your instructions to a T and my 23 qt Presto performed like a champ. It turned out great!! Thank you for giving me the courage to step up to the pressure canning plate!! ❤

Reading your post gives me hope at 66 yrs to try. I have an upright freezer only for meat and frozen vegetables. I am concerned about possible rolling blackouts and don't want to lose it all. ( or claim on insurance) I once did tomatoes in my 30's and the lids all blew off, what a mess. I don't want to kill us.

@@cricklicklers9382 This canner will hold: 24 regular half pints 16 wide mouth half pints 20 regular pint sized jars (name brand) 16 wide mouth pints 18 regular pint sized jars (generic) 7 regular or wide mouth quarts 4 half gallon jars

Dinali Canning has great customer service. They currently get their lids overseas but they said in spring 2022 their new plant on the east coast is due to be open so they manufacture them in the USA. I have started supporting US companies wherever I can.

Pressure canning is something from the US. I live in the EU and ordered my pressure canner in the US (costs a load of shipping and customs), but it was so worth it. I love the taste of the canned chicken. You don't have to salt it or anything. It is amazing and so easy. Love to watch your KZbin channel and God bless.

Carolyn, thank you! I’m 67, today, and canned my first chicken. 16 pints. What a blessing. I feel so empowered. Thanking the Lord for you and your teaching skills. I wish I’d known this when I was raising 11 kids, but better late than never.

I love canning meat. It is so easy and it protects my food long term. In the freezer I risk freezer burn and also losing all from loss of power.

If you lose power in the summer, wouldnt you still lose the canned food? Like down here in the south temps are regularly over 100 degrees with 90 percent humidity. Seems like canned food would also go bad quickly at those temps.

@@SofiaisSunshine no. There are no bacteria in the canned meat if it is sealed. I live near Atlanta and it can get pretty hot. The only issue is if you lose the seal on the jar. One reason you must NEVER store the jars with the rings on is to protect you so if you DO lose the seal it will not re-seal without you knowing it. Then you are in trouble. But it can degrade slightly over time if left in light or if temperatures do change often to extremes.

I followed this video step by step and actually had it playing while I canned my chicken 😃 I just paused it when I needed to and proceeded to can all day this way 🥰 I cannot thank you enough, Carolyn ❤️ I have watched, and will continue watching every video. Love to the family 🙏

You can do the same with Roasts and hamburger, cooked or raw. I can Costco rotisserie chicken and can stock made from the carcasses. I canned sausages (10 little pigs in a pint jar, raw) and topped them off with V8 juice.

My mama always told me how hard it was to can, make bread, cook, garden, etc. I have found out for myself all of those things were not as hard for me as she told me. But I 've always been afraid of canning. (The stories she told me!!) I can see that maybe it' s not as hard as I thought. 😊 Learning to garden this year. Next year, hoping for a harvest big enough to can, lol! Oh, and I'm 65.😁

Me too and I'm 63 lol us old women 😊 just proves your never to old. I am Still nervous to do more. I can't believe your mom said all that to you though, I would of thought she wanted you to learn how to survive. Maybe she was afraid you might poison someone lol. So she was trying to protect you. Today will be my 1st day of canning. Doing a small batch of a chili base. As I keep telling my granddaughter who is nervous about getting her driver's license - the more you do it the more comfortable with doing it. Gonna practice what I preach.

Hey Carolyn just to let you know today was my first day to try canning a 58-year-old veteran and I bought a whole bunch of chicken at Sam’s and brought it back to the house and cut it all up into the cubes like you said follow your directions perfectly and now I have 7 pints of chicken sitting on my counter still boiling. Thank you so much for making these videos it really really really helps a lot of people out there’s a lot of people fearful during these times you know with food shortages extreme gas prices in such and you’re just making it a little bit easier to deal with the issues of today again thank you

When I open a jar, I save the liquid for the best ever gravy. So much flavor. I save it in ice cube trays in the freezer.

I save the broth too. I keep container in the freezer. Use for many things.

Home canned chicken is awesome! Best chicken salad I've ever eaten was my own home canned chicken. I also store it as emergency meals for my dogs. I know, I know, but they love it and I love them. We all deserve good healthy food 🙂

My plan too! I feed my dogs like they are suppose to be fed. Kibble contains acrylamide and oxidized fats. I want my dogs to live forever.

From a fellow pressure canner / oil and gas industry worker, it is always good practise to undo the clamps on the sealing surface on the side away from you first. If there was a pressure build up, it would spray away and not towards you. Obviously, the risk on these canners is quite low, as both the gauge and the vent would need to fail for there to be pressure, but it's good practise nonetheless. Yupp! Same goes for opening flanges..."staying out of the line of fire" is what we call it in the chemical industry. We'd make it a habbit to visually check that the vent hole is not obstructed prior to putting the lid on. A light coating with petroleum jelly or some food-grade oil on the sealing lip of the lid is also recommended with this pressure canner that relies on a metal-to-metal seal alone. And, finally, when opening the lid, keep it in front of your face, like a shield, to direct the steam away from you, as the water inside is still very hot.

I canned chicken for the first time this year and I LOVE it! I can just dump a jar into a pot with some veggies and make a fast soup/stew for dinner, or shred it up with some mayo, celery, dried cranberries, salt, and pepper for chicken salad, or mix it with bbq sauce for shredded chicken sliders. The best convenience meals are home canned!

Just did this over the weekend and had 100% success with my lids sealing. I'm really stoked because it was my first canning attempt for anything. The chicken looks amazing in the jars and the smell was awesome just as you said. Next time I'll add just a touch more water to the jars because a couple have some exposed chicken at the top. I'm starting a pork canning project tomorrow, hopefully it will be another successful adventure. Your video was very helpful and I thank you for your willingness to share your knowledge in such a instructive and easy to understand manner. I watched...paused...and rewatched this video many times during the process to make sure I was following along correctly. Some people binge watch mindless TV shows...me...I've been binge watching your videos. Thanks again.

I just started canning this year. I started with collards, then moved to tomato sauce my husband made, and green beans. I’ve watched this video over and over making sure I didn’t miss anything. The pressure valve on my canner just went down, and I’m about to take out my first batch of canned chicken thighs. Excitement and nerves are running rampant right now!!! Pressure canning fruit? Why not just water bath?

@@lauraburruss2217 If you're doing a bushel or more at a time, it is quicker. Quarts only need about 5 to 10 minutes at pressure for fruit or tomatoes (depending on your altitude) , and a water bath takes 25 minutes for fewer jars.

My newest meat canning adventure was Cornish game hens for my 🐕. She loves it! No, she is not spoiled. She's a canine and thus.. a meat eater! She also gets duck, bison, beef, turkey, venison and chicken. In fact, I just roasted a whole chicken for her yesterday. The beauty of that is (canned or frozen) we can eat it too! 😆 Thanks for your videos, Carolyn. My 4 acre homestead in the making is progressing thanks to you and Josh. I have adopted my grandchildren and homesteading and self sufficiency is becoming more of a reality each day. We have a woodstove, plenty of wood, chickens, ducks and a garden. Things are looking up.

I live in Texas, am 74 years old, and always use old odd jars to can in. They use those pickle jar tops in Europe, so we can also. Work just fine. Keep just fine. I also reuse lids from the two part lids (like Ball.) When I go to use old lids from pickles or other home canning, I boil the old lids 20 minutes to make sure the rubber is back in shape with no indication of prior use. Proceed as usual. The old pickle jars work fine - have been using some every year for 20 years!

We just butchered 6 chickens. I followed your instructions and canned raw chicken breast to keep it moist in its juices, and also pressure canned about 56 cups of broth. Thank you for teaching me

Terrific video, very clearly explained! My favorite part was actually hearing the rattling of the pressure valve. I felt as if I were actually IN the preserving kitchen! Thank you!

I've cooked many years ago using the water bath method. We didn't know back then using a pressure cooker was safer. We cooked probably over 1000 lbs of fish and had no problem. HOWEVER, I was VERY careful with my process. It was nice to watch this video, see how relaxed & happy was during this process! Right after I saw this video a few months ago I purchased the Presto pressure cooker & canned pint jars of chicken. The meat came our very tender, I was really impressed! I don't think I will ever use the oven again for baking chicken breasts! They come out too tough! I've made multiple batches of canned chicken but many of them are with the 1/2 gallon size. I really like this process & want to thank you for sharing this information with all of us.

Carolyn, Thank you so much for this video tutorial on chicken raw pack pressure canning! You video on pressure canning beef stew encouraged my husband and I to take the plunge and attempt it. He has a lot of experience with pressure cookers, but never did pressure canning. I have some experience with pressure cooking but had no experience with any canning at all. We successfully pressure canned two batches of beef stew... with a few weeks in between, when beef temporarily dropped in price. We had great success. I needed my husband to partner in this, due to my nervousness over attempting it. Your videos are so detailed and reassuring! So... I purposed to try the chicken raw pack, and successfully canned 10 pints in my Presto pressure canner! Then, chicken went on sale again, and I tried, and succeeded in pressure canning 7 quart of chicken thighs, bone-in! By the time I attempted this, I had watched your video on raw pack several times, and I had it playing throughout the process if canning the pints,

I felt meat was the easiest thing to can, no recipes or peeling, just pack the jar and can. I love having it on the shelves so my teenage kids have easy healthy go to meals they can just heat up.

can raw cubed pork sirloin chops be canned using the same process? or should that be thoroughly cooked or slightly cooked before canning

I love canning chicken, it is so easy. I buy boneless breasts, cube them, stuff it in the jar. Easy peesi! And it lasts fairly well on the shelf. I can use chicken breasts in a lot of dishes.

Because my kitchen tends to get drafty,no matter the season, after I remove my jars from the canner I cover them with a lightweight linen tablecloth so they don't break.

I just got my first pressure canner yesterday. A Presto 16 quart, not the best or fanciest. But what I can afford. I'm 78 year s young and have been waterbath canning things as I got.Ive been canning since I was 17, helping my grandmother. My mom really wasn't a canner. We were military family so I guess it wasn't practical for her. I love it. Ive just never had a pressure cannerand with what's happening, thought I'd give it a try. I have canned chicken from the store, but I want to do hamburg.wish me lunch. I will read all instructions before anything.

It is exactly where I put when I brought home!!! Sad. But couldn't be helped. Have you been canning up a storm? I've been waterbathing things hopefully I'll get to it soon!!

Thanks for all the great tips! I have one to save your fingernails which I purchased and can say it works like a charm. It’s called the Brix 2251 JarKey Metal Jar Opener. It lifts any mason jar lid off with ease BUT do it slowly, not fast, and be sure not to grab the glass instead of just the metal rim because the glass getting caught can chip due to the firm grip this gadget has. It really is the best little tool I have found for the job and it’s around $15. It’s solid iron or cast iron. It should last a lifetime. Great job on the video!

Another good one is the Cookwise Mason jar opener; fits both wide and standard lids and won't chip the glass.

Just got done canning poultry this past week. I added baby carrots and onion flakes to the jars and my kitchen smelled like Thanksgiving ! It's nice to have home canned meat on your shelf for a quick meal prep

I'm trying to get the word out that for those who may have glass Mason-type canning jars within the distance of the concusion blast of a nuke strike, the preps are subject to breakage from the concusion of the blast. Recommend cardboard, bubble wrap, rags or whatever you have, to place between the glass jars. May our God continually bless you and yours!

I LOVE my Presto 23 qt canner. I can do 20 pints reg. Mouth, of chicken at a time! The canner is inexpensive and mine is well over 20 years old and I’ve not ever had a problem with it.

We have a large family as well, so this meals on the shelf challenge sounds awesome to me! 😍 We are mini homesteaders, nothing like y'all. We have a few sheep and a few chickens. Still haven't done very well with gardening. You guys are goals! 😍

Just a tip I prayed for 3 years for. My garden was beautiful until the second week in June the past few years. Then the leaves and fruits would die off. I tried so many fungicides and fertilizers and clays to stop what was happening, all to no avail. Then I heard about PH. The ph level is very important. Any hydroponics store will have what you need to test your water, soil and additives to the garden. With the right ph level you will have a thriving garden. I have high levels of calcium and iron in my well water and this was the secret not a filter system.

Thank you, just did 30 chickens with my friend, sons and her son. I cut up 5 birds and I'm pressure canning the chicken right now. Need freezer room (it's that time of year). I'm going to try pressure canning broth next.

I love home canned chicken. So many things you can make out of it. I take a jar of chicken, a jar of potatoes and one of carrots, add some frozen peas and thicken the broth with flour and put it in a 9 X 13 pan. I make biscuit dough to put on top and bake. So good.

I got my Presto for $15 @ thrift store. Go online & read about different caners . That will help you to buy a good one. Ace Hardware can order parts & they sometimes have them in the store. God bless.

@@pameladonaldson1336 The rule of thumb is 1 year - 18 mos. I've read comments on one of my canning groups by people experienced in canning meats who've had success 5 years out. It seems the only issue is the longer it remains on the shelf, the nutritional value diminishes with age.

I love chicken but I especially love it canned. I started canning everything I could get my hands on in the early 70s. I would ask friends and neighbors who had canned everything they needed canned if I could go into their gardens and pick what was left. Great memories!

My parents canned a lot of chicken back in 1999, getting ready for a certain doomsday or something. We cleaned out there basement in 2019, found 2 boxes of sealed jars, and a single jar of black goo. Before throwing it all out, I opened one jar, and it definitely passed the sniff test. Didn't eat any, but I totally would have if I found it post appocolypse. The jar of black goo smelled like you'd expect 20 years of death to smell.

I butcher and can 150/200 chickens each year. We have a family of 6, but other relatives are close by and we share. In our home tho we eat at least 90 chickens through the year. I love canning different stews with some of the chicken as well. I'll thicken up the juices to make the best chicken pot pie once open.

I use the lids up to 4 times, when canning dogfood but new lids when canning family food. They will seal perfectly a few times.
