Grandma and mama taught me lots of super simple ways to do things. Their house had a low back porch roof and they had a tin roof. All of their dehydrating was done on clean sheets spread out on that roof, with Mama or my uncle climbing up and down to check and turn. Things dried fast. She thought I was silly to want a 'real ' dehydrator 😊 I love knowing the low tech ways of doing things, just in case things hit the fan way harder than anyone ever imagined. Jerky, pocket soup, acorn flour, hominy from field corn, things that have fallen out of favor, might come in handy.

This was so valuable, and you address financial limitations so sensitively. I have experienced both the feeling of needing to store up for my family and having few tools as well as little knowledge. Then I tapped in to my step mom, mother in law and my own mom. I was amazed at the amount of jars, lids, labels and even two water-bath canners they didn't need any more. That freed me to purchase a presser canner one year and a dehydrator the next year. Now I'm set and I share the food with them.

The first year we went off grid on a extremely tight budget, the way I dried some items in hot weather, was we had a car that was waiting for repairs, so I placed cookie sheets of my thinly sliced carrots, etc in the car's back window, etc and dried them. It worked. What ever we have do to accomplish our goal.

In my country, Turkey, water canning is done traditionally without a metal seperator as it is not available. Instead our grandmothers always lay a thick towel at the bottom of the pot and also in between the jars (to prevent them breaking by clashing during boiling in water.

I like the idea one posted of using a towel or wash cloth in the bottom of a stock pot, I have only canned a handful of times, but since I had no rack I put stainless steel butter knives in the bottom of my pot to form a rack of sorts, as I said I am sort of a beginner, but grew up watching, and helping my grandmother and mother can, and prepare foods for storing. I remember my grandfather coring, peeling, slicing, apples, then putting them in a pillow case in the back window of their car, checking and turning,till they were done. best dried apples I've ever had , what a blessing to be brought up learning great skills, Thanks, Mom n Dad, And Grands.

On food storage, I have started buying spaghetti sauce and when I do, I buy the brand according to the jar. Of course I make sure they have the mouth that would fit the rings I have. The sauce doesn't always taste great but I'm buying for the jar. We can't always find canning jars where I am. Thank you for all your info guys!

Just a tip. A lot of the airfryers that have a door instead of a drawer have a dehydrate setting. It's very small scale but I made it through my first year of gardening using one. And I was able to get crispy bananas that remained white

You can dehydrate food in a pretty clean, bug free environment by placing produce on a cookie sheet, then placing it on a vehicle dashboard. Lots if sun and heat, even on cooler days. You can also put your produce in a screened box and place outside. As always, pay attention to weather and keep it dry.

My grandmother used to grow roses every year. In the fall before the first frost she would dig up the roses, remove the dirt from the roots, and then hang them upside-down in brown paper grocery bags in our basement. In the spring, she would bring them back outside and replant them. There would occasionally be one or two plants that would have a small amount of rot at the tip of a cane, but she never lost a rose, and I know those plants predated my existence. She's been gone for a long time now, but I'll always remember she had an epic green thumb.

I'm surprised a vacuum sealing machine didn't make the list. It can be a game changer for those that only have a freezer to put up food with. Especially since that's where most people start. They are extremely affordable by comparison. Though you would have to continue buying the bags as your storage increases. So there's an extra cost there.

yes yes! They are also an awesome place to find bread machines for $4 to $7. Bread machines make awesome kneaders and proofing vessels. LOL My sister bought a manual puree, grinder, fruit strainer for $8. The old one that clamps to the counter with the interchangeable cones.

If you have a good large stock pot, heavy bottom with a lid, and DON'T have a rack, you can still water bath can in it, you can out the metal rings, use old ones, in the bottom. Can tie them together with bread ties if needed and set jars on them. I don't even tie mine together, just put them in. I use my stock pot as a 2nd water bath canner.

watch Facebook marketplace, I have all of the things that Carolyn mentioned and have bought them all used. I even got an Excalibur dehydrator for $50. My pressure canners cost from $40 to $60 each, I have 4 now. Even my stock pot, was bought off Facebook marketplace, it was brand new still in the box. Most of my jars are second hand. I have enough lids for years, new of course, better than money in the bank. I dove into preserving and gardening 2 years ago and have learned so much! I have canned hundreds and hundreds and hundreds of jars each year and am learning what we eat and what we don't eat. I bought Carolyn's canning class and love the ready day meals. My favorite is the meat I have to say. Turkey, chicken, beef and pork, having them in pint jars on my shelves has changed my world. Each year, Buffy, who no longer lays eggs, raises some chicks for me. Last year it was 11 roosters and 5 hens. As soon as they crowed (we live in the city) I chopped off their heads, stewed them for broth and popped them in a jar. Doing the same again this year. I was raised on a farm with a huge vegetable garden. I am really enjoying getting back to the lifestyle. Thank you for all your help. Josh is being a huge help to me, as gardening has always been too slow of a process of me, but I am hooked now. Having green dreams of spring planting.

Checking your thrift stores for good canning jars is also a good idea. Those that you can't can in, you might be able to put dehydrated items in. I've also heard on a few channels that when you purchase new canning jars, check to make sure that they are made in the USA, some that they got were not and some of the jars broke in processing.

Two points: 1. I have found that some herbs or spices will become bitter when canned or frozen, so I just can my meat plain and season as I use it. 2. My first veg preservation was blanching and freezing because there was no way I could afford a pressure canner and refused to play the Russian roulette of water bath canning vegetables.

I wish Australia was more inclined to make homesteading not so cost prohibitive, a single quart size mason jar costs $5-8 each, and if you want to order more than 12 they are special order from less than 5 australian suppliers and around $50-80 and we dont really have an equivalent that is available readily. Same with pressure canners and freeze dryers. As a comparison the electric water bath canner that was recommended in a previous video is $149 US, in australia from amazon it is $600. So many skills food gathering / preserving skills are being lost here due primarily to cost and availability (even pre covid). Its almost as if "they" dont want you to survive by making, building, growing, preserving your own.

My son has replaced the wooden handles on a few shovels with galvanized pipe. Then rounded the handle end for comfort. They aren’t too heavy and for sure will last forever.

That's funny, 10 years ago I dug my first garden in my backyard as a 4x4ft square using a large wooden kitchen mixing spoon, it was a beautiful spring day and I wanted to be outside but I had to harvest my tomatoes on Farmville the Facebook game... And I said out loud this is ridiculous, all this time spent growing digital tomatoes stuck in the house, I could be outside enjoying the beautiful day growing and harvesting Real tomatoes.. so I grabbed the kitchen spoon and ran outback and dug up a square before heading in to town to try to buy some seeds.. my first 2 years of gardening I even found myself planting as though I was still playing Farmville, but I traded playing that game for watching homesteading videos on KZbin eo I could learn how to best do things!! 10 years later I now grow more than half of our food and I have a small flock of layer chickens, and am so glad I had received the soul calling to begin this lifestyle change before all the chaos started 2 years ago!! Preservation for a family of three here. Two giant stock pots. Soups, stews stocks. Water bath canner. Pressure canner. Dehydrator. I love the idea of a freeze dryer, but for our small family at the moment, the investment isn't applicable. We have two medium sized chest freezers for meats and a smaller one designated for veggies. I am looking at a second upright freezer just for finished meals. Family dinners, individual quick meals, stocks and broths, soup bones, pupper treats.

A deep large pot will work as a water bath canner. If you don't have a rack you can place a doubled up kitchen towel on the bottom. The purpose is to keep the jars from rattling and potentially breaking. Also although I have an Excalibur dehydrator, I have often used washed window screens to dehydrate herbs. I place them in an unused car ☺. I've even dehydrated some fruit this way but be sure and place some kind of protection over your seats as the fruit can drip. But in the summer it can speed up processing your garden produce.

I looked around and got a Presto 23 qt pressure canner for $109. They average $155. Purchased a separate 5/10/15 weight because it was a major stress saver. I also got extra rack and a water bath rack that fits it too. So I use it for both types of canning. Since August I've canned over 900 jars of food 😀 It's my favorite tool

When you're talking about the expense of food preservation not necessarily being expensive, it brought to mind that a few days ago, I asked on a local Facebook giving group if anyone had any canning jars they no longer use, and a lady gave me about 30 jars. Some were still brand new in plastic and some were dirty from her shed, so I will have to carefully check them over for any chips around the rims, but they were all free to me. Freecycle and giving groups can be a great resource to help you save money.

I get most of my canning jars from the local Salvation Army and other thrift stores - just have to check for chips round the rim. I also splurged on reusable lids from the Amish store.

Look for canning jars at garage sales. Check them. for cracks and the rims for chips, but sometimes people decide it isn't the thing for them. I've gotten some good jars for cheap this way!

Same here I’m in southern Idaho and we are a mess of sand. They clean off the topsoil and bring in the worst sand awful mix of sand and rock bits to fill. Good luck in your growing season!

Onion boplting in year 1 can be because of many things, it can be soil quality soil being to dry sun being to hot. And you can still plant them closely if you have spare space and use them for cutting greens which are delicious. and in year 2 they will splitr and you can just leave them in the patch indefinitly. So dont toss them check your soil and sow them as cutting greens (excelent in stir fried rice).

This isn't a recommended method of Dehydrating, but a friend who lives in Texas was so proud of herself Dehydrating Grapes into Raisins. She gave her son a bag of Grapes to quiet him on the way home from the grocery store. Two weeks later, she found Perfectly Dried Raisins under his carseat. Lol

I have a presto, a national, and an all American. I use the all American only as a last resort. It is cumbersome, takes longer, and frankly it just cans... Thankfully, I got it used!

Quart jars need to be covered by 1” in a water bath canning pot. Measure the height of a jar, add 3” and that is your shortest pot option.

One thing to consider when purchasing a good stock pot, is the heat out put of your stove. I have a 5gal stock pot. And I have had it going for 2hrs on high, on my stove and it never got anywhere near boiling. And that was with the lid on. My 3gal on the other hand will boil in about 40min. So just something to be aware of. Those 5gal pots are expensive. But if your stove will handle it, it is so nice!!

A couple of years ago we raised dinosaur sized turkeys. Our's were only 32lb dressed out and skinned (we were running out of time). When we were ready to eat them, we pieced them out, which turned out great for our family of 5. One turkey breast provided 2 meals for us. Without the skin, we wrapped them in bacon and were still juicy and tasty.

I’m able to water bath but the cost of importing a pressure canner from the States (and I can only find a Presto canner) is more than the cost of the actual canner. So I’m starting with all the other methods of preservation and hopefully it will pick up momentum over here enough to be able to get one at some point in the future.

You don't need a dedicated pressure canner. Any pressure cooker can be used. Most home pressure cookers will only hold 4-5 jars while pressure canners will usually take 12-15, but if you want to try canning at home you may find that sufficient. And a pressure cooker can be used for other things in the kitchen as well.

Our household is just my husband and me. I preserve largely to save money on large purchases. I can pork because to buy a pork shoulder, I often had trouble knowing what to do with all the cooked meat, now I just open a jar and have a two-person meal.

You can also put a towel in the bottom of the pot and use it as a water bath canner. You just don't want the jars directly on the bottom of the pan.

Here in Florida it's the same thing it's a surge of wide mouth then you don't have any for a while then you get a surge of regular mouth. They always seem to have at least a few here and West Central Florida but nowhere near the supply they used to.

I also use my presto canner as a waterbath canner there are only two of us and we just have a back yard to grow in so don't have as much to can at a time.

Use recycled jars plastic or glass that have a visible seal of plyable material inside the lid at makes a good seal gasket, such as a large soda pop bottle, sports drink, and jars that have a plastic or metal lid that has that gasket material seen inside the cap.

Hi Josh and Carolyn. Thanks for all you do. I’ve learned so much. Over the years I have acquired all the tools you’ve mentioned, including a freeze dryer. One thing I would like others to know, especially if you don’t live in the U.S. is, to ship the freeze dryer back to Harvest Right is very expensive! Mine quit working after 2 months of use and despite trying to fix the problem over the phone with their tech support, I had to send it back. It cost me just over $500 (Canadian) one way. I’m hoping when it’s returned (another $500), that it will work and work for a long time. When it worked, I loved it but knowing that my issue is a common one and the cost of transporting it for repairs, I’m not sure that I would buy it again.

Can you do a video on how you are going to can your turkey? We raised 2 turkeys and they where huge, for thanks giving we only needed 1 for 2 families. But I need to make room for a cow or pig in the freezer.

Pressure canners are very difficult to find outside of the US. Some countries do waterbath can everything though, even meat. I've seen it done by adding acetic acid for example.

Also, I've been given quite a few canning jars by older folks that know I can. Put the word out and maybe ask older folks as they may have canning equipment that they no longer use.

Had -30F here a few years ago (pinky of Michigan)all my roses made it. Cut those puppies down in fall and you'll be fine. Fine even if you don't. Rose's are tough. You find out right away if they're weak or not.
