Been a while since you posted. Yesterday I was actually worried if you were okay! Thank you for posting again!!! Glad you're doing okay! Also, what is wet aging?

Wet ageing is placing your meat without drying it out into a sealed air tight enclosure such as vacuum sealed bag give it a few days sometimes up to about 10 to 12 days to allow some anaerobic activity to help the meat to develop additional flavor. If it has an odor you went too far. Good Luck.
