Have you ridden a Honda with a more conventional modern engine, like one of their 500s? How do they compare in terms of riding experience?

No, this and the CB125 are the only bikes I have rode on, maybe someone can comment who has experienced the 500s.

Also, CB350 are made in India whereas GB350 are made in Japan.
