Super saturated solution of sodium acetate crystallising before your eyes. A seed (of crystals) is required to start the process of crystallisation. The process of crystallization is exothermic: the cool solution becomes warm as the crystals form. This is used in heat-packs that medics carry. Sometimes also called "Hot Ice"

Science to the rescue!!! Basically what happens is that this guy dissolved a fuck load of sodium acetate in a small amount of water at a super hot temperature. Hot water increases the solubility of sodium acetate but this guy becomes crazy soluble (like 50 g of it in 10ml of water, not sure). Then when the temperature decreases sharply, it loses its solubility forming back into crystals, which is what you see. Theres a delay though because the crystals need a little "blueprint", or bump in order for them to all form into crystals. Very neat stuff

+ThinnerCrayon005 ...and as these crystals form, they get significantly hotter... others don't get hot as they crystalize

At room temp it won't dissolve. To dissolve it needs to be fairly hot. I use a water bath to avoid overheating it... although in the end I used the microwave each time I wanted to re-dissolve the crystals (on (v.low) 40% power to avoid making hotspots). At room temp the solution will want to crystallize. So if there is anything in the solution, or even dust on the container, then it will crystallize out. If it's clean, then you can leave it for days without it crystallizing.

If I want to extract the crystals themselves, would I just decant it? Or do you pick them up individually?

does temperature affect the rate of solidification? would putting the liquid in the freezer, just to chill it a bit, make the reaction quicker when you pour it? at room temperature its super saturated, if you got it close to waters freezing point would it be super "duper" saturated?

@lKento It's not poisonous, but I wouldn't recommend eating it...especially anything more than a tiny amount

You have to pour sodium acetate on it :) its the stuff thats in these plastic heating pads, you just need a few of them, cut them open and pour it in a bottle, it'll crystalize when it comes in contact with metal or a already crystalized piece of sodium acetate :)

the liquid isn't water... it's got LOT's of a special salt dissolved in it. When the liquid (with the dissolved salt) touches the existing crystals is causes the dissolved salts to crystallize out (sort of splitting the liquid into salt crystals and a weaker solution of salty water)
