Well, THE SHOW Rhaenys (do not confuse with BOOK Rhaenys, who is nothing like this) was fleeing back to Dragonstone, to the sea, when Aemond's Vhagar ambushed her! So, she did not bow... for a while...! Then, when Maelys gave her the DEFEATED look, Rhaenys turned around and fled into the sea...! That is NOT what BOOK Rhaenys did! Yet again, the book far better than the show!

Rhaenys wanted to avoid war just as much as Rhaenyra up to the point where it was unavoidable! She sacrificed herself trying to take out Vhagar alone so that no further bloodshed would happen! She was trying to protect her granddaughter Baela and stop her from going into battles! What a brave woman!

What was the sacrifice for? After the first clash she could just went back to Dragonstone with the mission pretty much accomplished, and they pretty much knew it was a trap and only sent her... I know the books had it this way but they could changed it abit

Cole and Aemond will burn the castle at Rook's, and possibly follow to Dragonstone short after because it'll be clear that the Blacks still don't have an army. Also, time and time again they remind Rhaenys of her "fault" for "running away" when she could've killed them. This time won't be it.

Yeah, she was caught by Vhagar fleeing to Dragonstone, so she attacked before because she had no choice: had Rook's Rest fallen and Rhaenyra just fleeing the scene without a GOOD reason, Rhaenyra would have GRILLED her, probably worse!...The look Maelys gave her was very telling, she was hurt and in no shape to fight, hence why Rhaenys decided to go back into the sea, back to Dragonstone! But Vhagar ambushed her by hiding in the cliffs behind the castle! Now, that looks like Aemond's plan! How he managed to get there out of Rhaenys' sight, everyone feel free to speculate, but the point is she did not go out a hero at all! Nobody dies a hero by FLEEING! In that sense, the show YET AGAIN doing a complete DISSERVICE to BOOK Rhaenys, who, INDEED, went out like a champ, a fool but yet a champ!!

Short answer: Rhaenys and Meleys were both exhausted and hungry for patrolling the seas while the blockade was still unfinished in Driftmark. She and her dragon would only be a casualty if they joined Daemon with that condition.
