Sri Lanka produces around 22 metric tons of cinnamon every year. However, it isn’t the same cinnamon found on most people’s spice racks. It’s over 10 times as expensive and requires long, backbreaking work to harvest and process. Known as Ceylon cinnamon, it’s referred to by many as “true” cinnamon. But Ceylon’s cheaper, inferior alternative, called cassia cinnamon, dominates the world market, as it’s easily grown throughout Southeast Asia. We visited one of Sri Lanka’s largest Ceylon cinnamon producers to learn what it takes to make one of the world’s most valuable spices.

Cassia cinnamon - the Chinese stuff, and what's on store shelves generally - has its place if you're after that intense sort of spicy element. But that's the very thing many dislike about 'cinnamon' stuff. Sri Lankan lacks that harshness and is just mellow and sweet. Much nicer for most uses. I keep some sticks around now.

Information in this video is misleading and does not research more deeply. The coumarin content of casia cinnamon is a maximum of 0.2%, only 10 times that of ceylon cinnamon. With such content, if you consume 2 tablespoons every day, it is still within safe limits for health. However, casia cinnamon is more aromatic, the taste and aroma are much more attractive than Ceylon cinnamon. Casia cinnamon contains active substances for preventing diabetes and lowering blood pressure, much higher than Ceylon cinnamon. So cassia cinnamon is preferred and widely used by companies in the world that produce phytopharmaceutical ingredients.

@@ranahagrotech1681 so you've just told us that Cassia is better for making drugs? That's nice, but we were talking about food. And having 10 times more of a dangerous chemical is a significant result. It means you can eat 10 times less. Don't act like that's not a difference. And YOU may find the strong aroma of cassia pleasing, but the video is not being misinformative by reporting that most people disagree with you. I think you're just feeling a certain way about your opinion not being shared.

Once I learned the difference many years ago, I've never bought anything other than pure Sri Lankan (Ceylon) cinnamon. To me it's worth the price, especially given it's history and coveted status. I don't like buying knockoffs, especially if they might be potentially harmful. Considering how much I put cinnamon in so many of my dishes from stews, soups, BBQ spice rubs, hot chocolate, coffee, milk shakes, homemade ice cream, baked goods.. I go thru a lot of Ceylon cinnamon. I feel better knowing that I'm directly contributing to small scale farms.

I really think that these precautions over cassia are stupid. Like, who the hell eats 1 teaspoon of cinnamon each day for weeks ? No way. People drink so much alcohol in comparison to cinnamon that this entire video is a non issue to me, the liver damage that cassia cinnamon could potentially do is nothing compared to what alcohol does.

Take care whom you buy Ceylon cinnamon. Several years ago my cousins went to Sri Lanka on a holiday. As tourists who trusted too much they got totally ripped off when buying the powder. I buy the quills as it is easier to know the difference - and powder a little at a time. I also use the casia variety (stick form, not powder) for Indian cooking. It has a stronger flavour and gives Indian rice dishes a pleasant flavour. True cinnamon or the Ceylon cinnamon has a very mild flavour and also a different fragrance. I use the Ceylon cinnamon powder for French Toast and baked goods.

I use Ceylon cinnamon mostly for drinks (including bandrek and masala chai mix), desserts and pastry baking applications, but the only exception is hummus. For savory applications and in most other spice mixes, I use cassia from China, Indonesia, India, and Philippines. There are subtle differences in these cinnamon species. Where cassia has stronger cinnamaldehyde flavor, Ceylon cinnamon has a more toned-down cinnamaldehyde taste with subtle hints of bubblegum, orange peel, and resin.

In so many foods I would be far happier to deal direct. The growers know their job. Whether it is meat, milk fruit or grains. I am sure that maple syrup or pepper or coffee or tea or cinnamon all would be more honestly sold by growers. We had a fuss in one year when a lot of fruit was marked by storms. Growers know the difference between surface blemishes and diseased fruit. Supermarkets do not.

Most processed meal (not only encompassing fast food) are full of fake ingredients (My country is having high inflation right now - ppl so afraid to eat at diner since they purposely degrade their quality to offer a cheaper selection of meal. Malaysia. It even have been debated in Parliament. Most restaurant owner were angry, but they couldn't deny it and both parties r keep finger pointing. Ironic 😢 I know, but we do not have other options...) Cake + biscuit ---> vegetable shortening, emulco, artificial coloring which likely caused cancer if being take repeatedly over time. While the icing and fosting would enhance the look and deliciousness - most of maker just use instant commodity that is questionable by FDA grade General meal ----> fake flavors because it is cheap, strong preservatives, saturated oil, fake tea, questionable hygiene while cleaning the vegetables and high sodium or additional sweetener

The definition of legality is a joke even today. Even today, in the US and Canada, it is perfectly legal for a 14 year old to get a job. Plenty of things do that, cassia cinnamon ain't special. I don't think it was necessarily to act like the cassia cinnamon variety is some sort of bogeyman in order to highlight the Ceylon. Both are "real" cinnamon, both have their own specialty uses and flavor profiles, no need to act like one's an insidious plague on humanity

Actually got a box of quils here, labeled Ceylon, but it is clearly a mix as there are some really think single rolls on top which are of Indonesian origin most likely, but below it is the proper stuff, very thin bark many layers and much softer in flavour.

Direct to consumer via the internet is the way to go. The producer/seller can dictate the minimum sale and just start out with a relatively large minimum order, and as their logistics and export expertise increases, add sales of small quantities that the end users would buy. You will have a direct relationship with your customer and no one in between

Btw, Cassia is not "fake" cinnamon. It's Chinese cinnamon, which is often specifically called for in curries, where a stronger, spicier, less sweet flavor is desired, and is a fundamental Chinese spice and medicine. True Chinese cinnamon is also sweeter than Indonesian cassia.

@business insider - nice video about the difference between Ceylon cinnamon and cassia. More people should be aware. Just a little correction, Sri Lanka produces MUCH more cinnamon on a yearly basis. It would be more like 20 million kilo’s annually.

I brought some Ceylon with me when I visited. But I'm afraid I'd have to say that for taste, I really don't think 10 times the price would be worth it. It's somewhat different, but when used in dishes with lots of ingredients anyway, it's impossible to notice. So unless you eat a lot of it, the 'imitation' stuff is understandably going to be the more popular option.

Some people say Cassia is also Cinnamon. But true Cinnamon is a defferent species, and they cultivate it specially as a spice for human use. Cassia is just taken from trees that grow in forests. Its like comparing a well domesticated trained horse with a wild hose. And you try to ride them saying they are both horses.
