My dad used to take me to the Gulf State Pier to catch huge sheepshead. The evening before, I would go out on the beach and catch fiddler crabs. Sheepshead love them, and my dad knew just how to present the crab to the fish, jerking upward with just the right movement to catch the fish. We would go back to our cabin, and he'd scale the fish, then stuff it with blueclaw crabmeat. Into the oven to bake for a while, and OMG...No restaurant anywhere could match that taste. One of my best memories ever. Love you, Dad, see you in heaven...

Not flexing here....but i grew up on the coast in Fla...one part of my family settled a small fishing village...i Wish i had a $1 for Every Redfish, Snook (my Fave), Grouper, Mullet, Amberjack, Largemouth Bass, Shellcracker, Bream, i've cleaned...we would sometimes catch 300 a day on Lake Okeechobee. facts. A good sharp knife and whetstone nearby...and you can learn how to 'split the tail fin down the middle' like i've been fortunate to do at times. *Now, lets talk about Alligators (Yum)....@bigrich/ Filet knifes don't have to be expensive either...and hold your knife at 20* degrees when sharpening it on the whetstone.

As you know, sheepshead is a porgy/sea bream and very similar in shape to a fish we call "snapper" here in Australasia. You did a great demonstration of filleting and that's the way that most people at least attempt do it in this part of the world. Just to add, I scale some of my fish and cook with skin on. Scaling makes filleting for non-professionals so much easier and adds a lot of flavour when crisped. Keep up the good work!

I'd love to see a fishmonger, have a program, I could come and take a class or two on how to filet properly. I'd pay for that in person experience. I;d even work a week for free to learn. I had noone in teaching me anything as a kid, so I have guessed and watch videos to learn, but it's not enough. I need that real life doing and it experience to really enjoy fishing. I sadly gave up after years of being frustrated. I guess I have some learning disabilities. Thank God I can still buy the tasty little jokers. Thank you. I'll subscribe and hope I catch one to get to use this.

Soak the fillets in an ice water bath and the blood comes out into the water. The meat will turn white and be firm.

Fishmonger is an expert for sure. But I have another way. Go right in the vent, push blade straight up and out the back ,then go in that cut and start towards the head. I mean ,there is already a hole there, reverse filet I say. The skin is so tough it will dull your knife pretty fast. Pork chop of the sea.
