whenever i try to play a map with some new angles I keep hitting my arms together, or just can't make the hit fast enough - is there any advice you could give me to improve my gameplay please?

Yeah dont worry everyone goes through a lot of this. Basically just keep on playing the game and slowly try harder stuff. You dont have to throw yourself in to things way above your skill level. Beatsaber is a very playtime dependent game in my opinion. Even after 2000 hours on the game im still constantly improving on things as time goes. just have fun with the game and actively play it and youll get where you want to! :) The ingame practice mode to slow down songs could also help learn how to position your arms on certain sections to not hit them together.
