here's yo answer (big spoilers for the ending I guess-): they don't eat at all, they don't even have organs, we know this because wambus says at one point "they ain't animals, and they ain't plants, no organs, no seeds, nothing! and you have to eat them raw, or they turn into mush!", so they are literally made of goop, parasitic goop at that, this is also evident at the end of the game where when the bugsnax are killed they splat into a puddle of slime.
