Pastéis de Belém. I remember a time when it was a much smaller place, which served other sweet items as well. But even then, the queues would extend around the building. My parents went there in their teens after school way back in the 1970’s. If you travel with them, inside their cardboard package, for two days, they still are delicious and soft. Proud of this (my) Portuguese heritage.

Pasteis de Nata were brought to Macau (Portuguese district in China,) and adopted by Chinese bakeries to create Egg Tarts, and made into a staple in HK cafes with milk tea.

The pastry shop did not inherited it - a business man, who owned the shop, bought the recipe from the monastery and patented the name 'Pastel de Belém'. As people thought it was ridiculous to have to pay to call a sweet by its name, another name was found and today the sweet is commonly known throughout the country/world as 'Pastel de nata'. Also even though they don't tell you the ingredients, there are egg yolks and lemon. Pastel de nata is about 3 things: the texture (puff pastry), the color (yolk) and the taste (lemon, sugar and milk).

Actually, in my city (Bristol) centre there is an open market, Saint Nicholas. In the food area of the market there is a Portuguese diner, and they bake hundreds of these tarts every day. Now THOSE are good!

I've had these pastis de belem and can say that the custard is the best in Lisbon. I prefer a less crunchy pastry though. I had one at the airport that was just as delicious even if the custard wasn't as light as these.

Every time I'm in Lisbon I make the not-so-quick journey to Belem and buy these.... by public transport it's about 40 minutes from the city center including walking, but it's beyond worth it. They're so delicious and generic bakeries in portugal don't make them as good. Once I was walking back to the train eating one and a seagull stole it out of my hand right next to my face. its wing touched my cheek.

These without a doubt are excellent, iconic artisan pastries and every time I go to those parts I'll grab a few. But in my opinion, there are other places in Lisbon and, for instance, in Porto where the pastéis de nata are more to my liking. Of the Portuense ones my favourite is "Fabrica da Nata", but the others (Manteigaria, Nata Lisboa, Neta 3 e Natas D' Ouro) leave me pretty satisfied also. PS: I'm not differentiating pasteis de Belém vs pastéis de nata. But I respect those who do

I've made pasteis de nata at home. Even ordered the proper molds from Portugal. They are right the pasteis de Belem are not pasteis de nata. I've tries 3 different recipes and each one isn't it. First one was too sweet. Second one I tried whitening the egg yolks with sugar but this method produced a complete brown crust on top. Third one I cheated and used cream. The thing about pasteis de Belem is that the custard is so white and not too sweet. The ones I've made have all been to sweet and the custard has always come out a pale yellow to a bright yellow.

Will always be hard to do a proper Pastel de Nata at home without a very hot oven, since they should be baked at 400ºC. But even if not perfect, it's still possible to make good ones at home nevertheless.

@Motta that as well. Although the pastry was crispy and I did get some char on the pasteis. The others had to be briefly placed under the broiler. You can make up some heat retention with an oven stone. Which is what I use when I make canele de Bordeaux as well. Eventually I'll make my out door oven to be able to bake things at higher temperatures. One day.

To whiten the egg yolk you need to beat the egg yolk and sugar together on high for a long time, 10 minutes. That's how I prevent the tiramisu from being too yellow from the egg yolks.

@Laura Rocha this isn't the same as tiramisu. If you read my post you would see that I beat the egg yolks with sugar to whiten it. But when I baked these the tops formed a brown crust. No blisters, just a brown crust. Usually when you see pasteis de nata recipes they have you cook a roux and a syrup. Well I took some of the sugar from the syrup to whiten my egg yolks. Also many of these recipes custard is very liquidy. When you see the pasteis de Belem the custard is thick.

it's absolutely feasible. I make mine at home and my oven is at 550 degrees F and that's only because it won't go hotter than that LOL! The point is to cook the flaky pastry at a high temp for little time to push the layers up. The custard is already cooked so they don't figure into the cooking except a thorough heating through.

The Portuguese ones are more crispy and flaky. The custard is sweeter and crispy on top. The Cantonese traditional style is less sweet and crispy. The pastry is slightly softer, but varies from bakery to bakery. I believe these are originally inspired by the English custard tart. I love both, but my personal preference is the HK style

I feel as though 400°C for 20 minutes would burn them. That's about 750°F.
