Too bad you didn't fire the wood first. Fired wood is much stronger and would probably hold that edge better. Edit: I should have said fire hardened, not fired.

Octavio Infante Wood is well known for absorbing any bacteria that comes in contact with it. Taking one from the video, when using the wooden knife to cut the raw meat for instance, salmonella could become infused in the wood, leaving it almost impossible to get out. It’s the same reason why getting a splinter can lead to a bad infection if not removed and disinfected. Bacteria absorbed in the splinter can spread into our skin, causing the infection.

I think you should have used a straight blade (instead of a curved one) aligned to the fibers of the wood. That way the splinters while cutting could be eliminated and the edge could be more durable and sharp.

Undoubtedly. I think it would be funny if TKOR did a redo where they tried to follow Kiwami Japan's video to see if they can replicate it or if they would just fail even harder. Or see a video from Kiwami Japan showing how to turn the types of wood used by TKOR into even sharper versions that actually work.

You should try teak. I think a major factor in your knives' durability is the moisture, and teak is naturally waterproof. Also, the grain of the wood matters. Try aligning the grain perpendicularly to the cutting edge.

Watching you cut with these wooden knives and seeing the splinters left made me think of all the "Fiber" you would get ingesting the items cut. Hummm - Raw Fiber! Impressive edges none the less. The Ebony one with its edge soaked with CA glue would look the best with polished edge I think.

I feel like the direction of the grain of the wood relative to the edge would make a pretty big difference, especially with sharpening and splintering...I would think having the grain of the wood perpendicular to the cutting edge would be most effective and least likely to splinter and much more likely to hold an edge...just a thought...

I would've liked to have seen this with Caranda/Itin (Prosopis Kuntzei) core wood as well. It can supposedly be even more dense than Lignum Vitae, and is nearly as black as ebony. It's also not endangered/protected at all, so it'd probably be relatively easy to get ahold of (at least compared to Lignum Vitae, which is an endangered species)...

Also did not take grain direction into consideration. Having it at certain angles may provide more "tooth" at a microscopic level. Of course that can also affect strength as well. Then combine that with fire hardening.
