The bison was not as tender as a reg brisket can get but it wasn't tough at all, I see many asking about mixing it with sous vide and I think it makes a lot of sense. If I get my hands on another bison brisket I'll experiment with sous vide! 😀

Ninja, what do you attribute the strong jerky flavor to? The rub was the same. The smoke was side by side. Of course, the meat was from bison versus beef, but could it have been the tallow? I would like to buy some bison tallow and try it. Thank you for this video as my wife and I put it on our living room screen and enjoyed it. The screaming you guys do was AMAZING to watch! ❤️

Thanks for the great question Earnest. A whole bison brisket for our 100% grassfed bison is about 6 lbs. This cut is 3 lbs, so we make about two per carcass.

I think the Bison Brisket would do really well with a 2 to 3 hour smoke followed by a 24 hour 155 degree sous vide bath.

Hi James, this is a common assumption as most people have the image of a 2000 lb bison bull that is probably 5+ years old. Our bison are 2 years old and just under 1000 lbs each for live weight. The carcass yields about 6 lbs of brisket, then we cut it into 3 lbs portion cuts.

If you are looking for simplicity, pellet is the way yo go, the masterbuild will make you work more but it produce amazing flavors! both are awesome in their own way! 😀

It is a set it and forget it… if you are not making ling cooks! I found that on cooks over 8 hours you will need to refill the charcoal. Besides that is a great grill!

I’ve said it to you before man, but you gotta try BEEFALO, an actual hybrid cattle (5/8 beef breed, 3/8 bison breed), not mixed together. You can find it all over the country, and it’s INCREDIBLE!! Gotta do a video, you won’t regret it.

Why is the beef brisket bigger than bison : this seesm stupid since the bison is generally at least 1.25 time bigger and no one is talking about it, you get a buffalo brisket is about 5lbs while the beef is 16 ish

Bison is great! Many people are with the outdated idea of bison being next to extinction but nothing farthest from the truth. There are entire farms dedicated to grow bison in the US. The meat is healthier and the prices not too bad compared to the prices in my nearest supermarkets… It taste amazing and man it sure is delicious! 😀
