My family were migrant farm workers in the 1930s and 1940s. Picking cotton was horribly hard work. A lot of the little kids had small cotton sacks. Everyone in the family worked. Here in North Texas, I observed a farm along a road I traveled almost daily. One year the government clamped down on Mexican illegal migrants. That year the farmer had planted several different types of melons. The melons rotted in the fields, he couldn't get any Mexicans.. White Americans won't do farm work. Experiments have been done trying to get welfare recipients to work on farms. I believe it was green onions where Mexicans harvesting them were making $400 to $500 a week. A good factory job at the time paid $200 to $300 a week. We had a farm in Arkansas. One year I raised a sweet potato that weighed a little over 14 pounds. One of the soybean farms appears to be using no-till farming. That means the field is not plowed after or before planting. Several restorative crops are planted too heal the land. Then the soybeans are planted. This saves the farmer many thousands of dollars in fuel costs and equipment usage. When my Mother was a girl, schools closed during planting and harvesting, so the children could work. When I was in school, school didn't close but farm kids were excused absences. There are different varieties of sweet potatoes. Some are better for baking and eating, others make better pies and cooked food. I noticed one farm where a red sweet potato was being harvested. These have the best flavor and are good for all usage.

You can easily. From the seed companies buy small plants called 'slips'. Or just buy a sweet potato and put it in water and let it sprout. Plant these slips root first and wait.
