Sharding reduces decentralization though. All your doing is trading some decentralization for some scalability. Unfortunately all you can do is make trade offs when "upgrading" a POW or POS blockchain. Saito consensus fixes everything though

If so much information is processed off chain thru the zk and optimistic rollups doesn't that jeopardize the integrity of the blockchain itself from attacks? Less data on chain, less energy needed to change it?

The regular consensus mechanisms still apply. If you want to revert it you need to outperform 50% of the network in terms of hashpower and construct a longer chain which is then accepted by the network as the canonical chain as it is the longest. Doesn't matter if the blocks are empty or full.

And it’s being released to the main net in a few months. I honestly don’t see where the pipe dream is.
