Very convenient, but what about capsaicinoids other than capsaicin (like dihydrocapsaicin), that contribute to heat?

I was thinking the same thing. The other capsaicinoids play a lot on the burning sensation in the mouth, throat, stomach, etc.

Electrochemistry can never provide the same level of specificity as HPLC. It would be interesting to see what sample interferences can cause false high or low measurements.

I wonder what the change in barometric pressure might have done to the sauce. Given its travel. Is it possible it weakened the units measured? Challenge experiment! Test the same bottle before and after traveling at various altitudes. Perhaps the chemical is pushed back into mashed vegetables and is harder to read after barometric pressure is applied?

I haven't grown enough peppers since my son went off to college (BA and MA in Math) to warrant purchasing a home unit. If I ever ramped up production for local sales of fresh peppers, I might consider paying up to $2000 for a home unit.

As a pepper nerd myself, I don't believe any mechanical contraption can truly measure the effects (and after effects) of capsaicin. Certain heat and other profiles/qualities are immeasurable.

Nice technology. This would be perfect for a company that makes hot sauces. I only grow a few peppers plants per year so wouldn’t make sense to use this.

No, it's 10 ml to 100 µL (microliter). 10 ml = 10000 µL.
