Smoothie Recipe:
2-3 handfuls greens (I like baby kale, spinach, and chard)
1 large ripe banana
1 cup or more of frozen pineapple
8 oz water or soy milk (the milk makes a super creamy delicious smoothie!)
Dahl Recipe:
1 onion diced
2 tomatoes chopped
3 cloves of garlic minced
1 tsp grated ginger or ginger paste
1 tsp curry powder
1 tsp coriander powder
1/4 tsp mango powder
1 1/2 tsp Rani Chana Masala
1 cup split red lentils
4 cups of water
salt to taste
turn instant pot on to sauté and sauté the onions, tomatoes, garlic, ginger, and seasonings for a few minutes, adding a little water to avoid burning. Then add red lentils and sauté a few minutes then add the 4 cups water. Place the lid on the pot and press the bean/chili setting and cook for 10 minutes then let pressure release naturally, then its done!! serve over rice and garnish with cilantro and lime.
Peach Walnut Salad Dressing:
2 tbsp walnuts
2 tsp dijon mustard
1/4 cup peach vinegar
1/4 cup soy milk
blend until smooth
Pot Pie:
1 onion diced
1 cup celery diced
1 cup carrot diced
1 tbsp minced garlic
8 oz mushrooms sliced
1 cup frozen peas
1 cup frozen corn
4 cups vegetable broth
1 tsp onion powder
2 tsp garlic powder
2 tsp poultry powder
Vegetable soup base to taste
pepper to taste
Thickener:
2 medium potatoes diced
1/4 c. cornstarch mixed with 1/2 cup water (optional if potatoes don't thicken enough)
heat up a pot and water sauté the onion, celery, carrot, garlic, and mushrooms. Once cooked down add the peas and corn then add the vegetable broth. Add all the seasonings except soup base and pepper, leaving that until the end. In a separate pot boil potatoes until soft and then blend until smooth thick mashed potato consistency is achieved. Add potatoes to pot pie mix and stir. If it still needs to be thickens then add the cornstarch and water mixture and bring to a boil then turn off. Add soup base and pepper to taste. place in a baking dish and add biscuits on top and bake at 400 for 15-20 minutes or until biscuits are done
* you can also top with mashed potatoes or cornbread

Lol you're 10000% correct! I have been plant based for about 4 years now and after reading and trying to figure out why that is I came to find out it's because your body no longer has a dead carcass it's trying to digest as gross as that sounds 😫 Stay consistent and listen to your body when you eat. Intuitive eating is super important in the beginning stages of being plant based. You got this!! 🌱🌿

Hi Kiki - when you mentioned farting after eating legumes; what I do to eliminate or maybe reduce the winds is add about 1/2 to 1 teaspoon of "asafoetida" while cooking legumes. I also add to my beans, whether it be black, chickpeas or navy beans. Being an Indian decent my mom has always added that when we cook Dhal. You can purchase it at Amazon. I get mine from the local Indian store. Love your channel...I too have changed my diet to Plant base after watching your youtube videos along with Pickuplimes.

My theory is that beans are so good for us because of how much fiber they provide. Some people think you’ll get most of your fiber from fruits and veggies but they’re actually composed of mostly water. Starchy foods like beans, grains, and potatoes are highest in fiber. Most people don’t get enough or even close to enough. And it’s literally what feeds our gut microbiome (community of bacteria, yeast, etc.), which are like the little people in our body helping it complete the majority of its work - including immune system, brain, and heart functions.

I found you accidentally, and I felt healthier just watching you make that Green Drink. I’m going to try it. I need an entire life change and I think it’s great that you lost all that weight. It’s not only unhealthy being overweight, but very depressing. I’m glad someone commented on your wardrobe so we could all see those beautiful off the shoulder tops... I’m sure that wasn’t their plan... how funny 😉 Best of luck with your healthy life change, I’m really gonna give it a try...hopefully I will be as successful as you.

You are so inspiring! Your honesty and transparency is refreshing! Your interchange about gas with your husband 😂 We recently transitioned to fully WFPB. Even after several months we are still gas bombs at times. We walk every night after dinner and many evenings it’s a musical symphony 😂

Kiki, I love that you share your journey. Question - you always ate beans. Why is eating beans now an issue? Are you eating more?

thank you!, yes im just eating so much more now and I think that coupled with all the raw salad greens and veggies is a lot of added fiber lol

Hi. Which book is it that has the mc Dougall advise for how the plate should look like. (The half starch half non starchy veg) You motivated me to purchase his book but I'm not sure which one it is. I see a few. Thanks in advance!

I watch your videos over and over. You are helping me so much!!! I was wondering about the caffeine. I get up quite early and I used to have black coffee. It kept me going thru the morning. It has been 2 weeks and I am not really recovering as I wanted. How important is giving up caffeine for this diet? Do you think that I would still lose? Thanks for sharing all your videos. ❤️👍🏻

Hello, I am a new subscriber. Your meals look amazing. I was in for 3 weeks and felt super gassy. If that’s a word? So I fell off. I am glad that I found you and now know what to eat. So hey I will get back on the horse and try again 🎉. I have the same markers as you - pre diabetes, high blood pressure. Hopefully those will disappear soon. How long did it take to see normal blood sugars?

Hi, so I just came up to your video, I really love your content, this is the first video I have seen, I am already going to follow you on IG. Where do you recommend I start or a video you recommend I watch to start my journey. I like your approach, I used to be plant base about 9 years ago, stayed with it for 2 years and then life happens, I feel I still have some of the knowledge but the tips and tricks are not there and I would love to get an insight on how to get started again. Thanks for your input.

You look great Kiki! Are you able to post a few more pictures on KZbin of when you were heavier? I know you do on FB & IG, but would like to see them here also! Do you have any tips on how to not eat as much. You mentioned that you would love to eat spoonful after spoonful of peanut butter, but you don't do that. How do you have the self control? Any tips? As even with the good foods, i.e. oatmeal I can keep eating it even when I am full, because it tastes so good. Thank you!!
