I started looking into whether or not it is possible to carbonate something with nitrogen (I would think you’d be nitrogenating it), and it turns out that beer creation is quite a complex topic with many rabbit holes. It didn’t take long before all the forum posts about beer gases, nitro taps, PSI levels etc. made me realize I didn’t actually care to know the answer that much. All this is to say, thank you for the video - and good job on condensing this ridiculously complex topic!

Hops are generally what gives beer its bitterness, by not adding bittering hops would make the beer seem sweeter. Hops are considered to do 6 important things, anti-microbial/preservative, bitterness, aroma, flavour, head retention, and mouthfeel. Wild yeasts, including Brettanomyces, don't generally give acidic characteristics. Those acidic profiles are more associated with lactic acid bacterias, like lactobacillus and pediococcus, and acetic/vinegar profiles from acetobacter. Rodenbach actually adds a preprepared mixed culture for fermentation, that includes microbes often called 'wild,' as well as relying on microbes still in the brewery, usually in the foeders. "No need to store beers for long periods of time..." Clearly not familiar with lambics, Flanders red/brown beers, wild ales, stouts, barley wines, etc. Beers generally don't have an expiration date but 'Best Before.' Expiration dates are more associated with perishable goods, that after a particular date, are considered to be dangerous/unhealthy for consumption. Beer, while changing over time, don't degrade to the point of being dangerous to consume.

You said all of the ingredients are boiled together...which is not true. The yeast cannot be added until the wort has been cooled to a temperature that is specific to the style and/or type of beer being brewed. Generally speaking somewhere in the 70 to 78 degree range for an ale and from the high 40’s to the mid 50’s for lagers... Fahrenheit.

Also, if you want to be technical, the grain also isn't boiled, the wort is. The grain is steeped in hot water, not boiled.

I never invested in quality brewing equipment and I didn’t have temperature control for fermentation so I was kinda limited on what time of the year I could brew. Life happens and suddenly my financial priorities had to change. And just like that, I’m no longer home brewing.

It's a swim bladder. It's used at the end of fermentation and doesn't make it into the end product.

Very few beers use isinglass these days. Probably the last holdouts would be some real ale producers in the UK.

It actually depends on the quality of the brewing equipment, knowledge of brewing, water quality, yeast quality, how fresh the grain is…etc. Give your friends some time. If they take steps to improve their beer they might end up making something that you could enjoy.
