You could cut the tomatoes, butterfly them. Once you do this you can pull the pulp out then place them on a cookie sheet and roast them under the broiler for 5 minutes. Then take them out, let them cool for 5 min then the skins will come right off. Then put them in your blender for about 30 seconds, then place them in a pot and stew them down. I do understand the skins will help make it thicker faster but I prefer to remove them. You can now place the stewed down sauce in the oven on cookie sheets, at 250 for about 2 hours, stirring every 30 minutes until it thickens up, then bottle it and water bath it for 15 minutes.

Thank you for creating this video. I would like to know if it is possible to store it in room temperature once it is pasteurised and how many kg of tomato I would need approximately to get 3 ltr of tomato paste using this method?
@CreativePeoples4 жыл бұрын
You can keep pasteurized paste at room temperature for a year. The amount of paste obtained depends on the type of tomato and the concentration of the paste. For example, in this video, I used 40 kilograms (88 pounds) of tomatoes to make 8 kilograms (18 pounds) of paste, and each kilogram of paste is about 750 cc in volume. So with this method, you need about 20 kg of tomatoes to prepare 3 liters of paste.

thank you so much. I would have been happy to buy the stuff in the tube but they charge way too much for the packaging and the canned stuff can taste tinny except one brand. this is going to make my supermarket cry.

Is it after boiling in water with the bottles then I will open it up again to add oil or I add the oil before boiling the bottle. Please explain further because I'm so interested in trying this out. Also, must I store in a bottle, can't I store in a plastic jar, will it give the same result?

Are Roma tomatoes the best for paste? Also, what temperature do you cook the tomatoes at to have a paste in two hours? 🤔 I've had my pot on all afternoon at medium heat and it's not quite done. It is now 7:30 here.

Yes you can. In this process, the goal is to reduce tomato juice and kill bacteria.

Way more work than I do. Cut, cook, run through a food mill, then cook down. Seeds and skins just don't affect final taste enough for me to worry about it. Reduce alot more too. Roasted vs boiled flavor profile matters. If you don't burn it. 😬
