Pink Lady apples are my absolute favourite variety. Perfectly crisp, sweet and juicy and I don’t know if I’ve made this up because they’re pink, but I also get a slight raspberry taste too which I adore. They’re so refreshing when chilled a bit and feel indulgent cut into wedges in a bowl rather than as a whole piece of fruit. I’ve always wanted to try the US apple butter too with pancakes.

Absolutely enjoyed this video, hope to see it as a series - videos focused on a particular ingredient. Timed or not, I'll definitely watch. Applesauce in a crockpot is a monthly thing for me - peel and cube (2 kg or so), slow cooker on high for 4 hours - maybe extra water if the apples are not juicy, add cinnamon/sugar to taste. Mash it up, and store in the fridge. Low effort and delicious. Also, toss the leftover apple peels in a bowl with spices - I do cinnamon, maybe sugar, then spread out on a tray and dehydrate/cook in oven at lowest heat until dry. Great snack or as a garnish - I like to crumble some on my applesauce. I just got a spice grinder, and I want to try grinding some up and using it in a shaker as garnish - maybe over a drink, on ham, etc.

Bratapfel sweet, Cox Orange stuffed with cinnamon marzipan and rum raisins. Bratapfel savory, Macintosh stuffed with sauerkraut and bacon. Both baked at 180° C for 20 minutes. Sweet Bratapfel goes well with brioche vanilla French toast fingers and a highly aromatic tea like Yorkshire jam and toast. The savory version goes well with potato onion pancakes and a Köstrizer (Krusovice) beer.

This vid feels like a throwback to the days when Ben was trying to teach the normals. It was creative, it wasnt snobby or pretentious or a showoff of some exotic meal experienced on a vacation the average viewer can't afford using ingredients the average viewer cant find, and the lack of studio audience laughter was greatly welcomed. As someone with an Apple allergy (which is very uncommon) this video was quite funny to pop up on my feed. Mine is a bit of an obscure allergy, but I would love to see a video on alternative ingredients for common recipes I'd love to see something you wouldn't think could work without the key ingredients. For example a satay sauce but without peanuts.

We have a special dish here in Denmark, which is pork breast/brisket/stripy bacon cooked with sweet apples (Æbleflæsk) and often onions as well. I believe it's also rather common to use apples with pork in other combinations, so I was a bit surprised that none of Ben's dishes had pork in them, but that might have been a time thing for this format.

A tip to reduce waste even more is to use up the leftovers from the juicer. I usually cook it down into apple sauce and use brandy to loosen it up to compensate for the juice thats been separated our. It is also nice to use in baking but the appel sauce is a real favourite.

And I avoid buying apples, because I can't seem to finish them off before they go bad, and I really don't want apples in every dish I make. Still, this gives me ideas of how to use a lot of apples at once, in very diverse dishes, which lessens that issue. And making a chutney, dressing, or cake is a way to use up apples and still freeze the cake to serve later, or jar the dressing or chutney for later use. Juicing is a great idea for using up those odds and ends of apples, too, but I don't have a juicer anymore. Very thought provoking episode, guys, and watching Ben come up with 11 different uses of apples was really fun to watch, too.

I would love to see a similar format video format as a contest between Ben and Kush. Each chef get a video to do as many dishes with ingredients at the end of each a normal rates each dish on 1-10 on taste and presentation. Be fun to see how much each chef focuses on quantity vs quality to get point in the time allotted.

I honestly absolutely love apples. Maybe some of it is being an October kid, but a lot of it is growing up in an area that had some lovely local apples. Particularly the Fuji variety, which is one of my go-to apples to this day. These are definitely recipes that I'll be giving a go!
