Hello, team Vanzai! It is cool that you provide food for the needing childern but you should invest in cooling, to keep the food in correct temperature. So in this case refrigerated +2-8 dec Celcius. The transportation is also easily managed, either you serve warm or colds, buy these: GN 1/1 Thermobox, Polystyrene (EPS) boxes! And get the cooling capacity you need to the studio. Prepare food in GN 1/1 containers and put them to cold or to those boxes, when finished. Then you take the final result to the table in the end and we get the content, and the children get good quality food. Keep the food safe to eat, for the orphans sake.

Dont need that sauce simply use either mayo or mustard thats all you need. Also the onions didnt need the sugar to caramelize they wouldve done same thing cooking longer and will have plenty of sweetness. Also may as well fry the bolonga if gonna do all that prep
