While I was getting a mechanical engineering degree, I was amazed by the power of math and how it can be used to describe everything in the natural world. Math didn't come easy for me and I really had to work at it, but the effort was worth it.

Totally backwards. Math is derived through observing what the universe is and does. When we get the tiniest piece right we have a big party then find out.... ooopps and then it's back to the drawing board. (And getting over the Newtonian hang over.) I.e., math does not determine the behavior of the universe, math gets it behavior from what the universe is and does.

There are other ways to defines nature other than mathematics but they haven’t been discovered yet. They will be in the distant future though

Give a read to "The Unreasonable Effectiveness of Mathematics". This is not an argument for "creationism" per se (a term I actually find nonsensical - it leads to infinite regress; who created the Creator?). If you study mathematics and physics deeply, you can't avoid being astounded by how *efficiently* the mathematical systems explain nature to great accuracy. We don't need tons of symbols and abstractions relative to what we can explain. This is in stark contrast e.g. to a deep neural network, which uses billions of parameters to summarize its domain of applicability. The standard model by contrast only has a couple tens of free parameters combined with some general ideas about symmetry groups and differential equations. General relativity has basically 1 or 2 free parameters (depending on whether you count the cosmological constant) and uses some abstractions about differentiable manifolds. It's astounding how much we can explain with so incredibly little. Nature obviously has mind, and we can read it.

Some math is kind of a kluge or crude tool it's true, but getting down to the level of basic physics it's really hard no not be astounded at how well it works to explain so much with so little. It starts to push a person towards Platonism.

Until we interpret the phsical meaning of the DIGITS, with which we calculate in our minds (NOT the electrons of the BITs in the chips we manufacture), all the phenomena we describe with mathematical formulae would remain deceptive. Remember, none of the particles (except THE PHOTON) in the Standard Model of Particles has any direct relevance whatsoever to our perceptions, while there are 5 more senses (including BREATHING as the common sense ~ common to all 3 entities: PLANTS, ANIMALS and HUMANS) unrepresented by any unique particle. Neither are the feelings of needs (hunger, fear, pain,...) and satisfaction particle physically interpreted. Nature can't be so stupid to provide us 6 senses and feelings, if all the rest can be derived as functions of just one sense perception: SIGHT. This is the reason why human race in its entire history, from antiquity to present day, from Thales of Miletus to Stephen Hawking (and still continuing), is yet to derive the mathematical model for the mechanism of even a single natural phenomenon that could PREDICT accurately when that phenomenon may harm life function, let alone PREVENT such ~ which SHOULD, in fact, be the sole purpose cum criterion of proof af all knowledge.

There is nothing special about us, everything created that wasn't created by intention (us or another animal or plant or fungus) is random including the earth, the sun, the solar system, the galaxy, the stars, the universe, there is no purpose and that's the wonder, the freedom, the beauty of it all. Hydrogen becoming us is amazing enough. We don't need to ascribe any of this to a deity or intention and we can't say that everything except the deity needs to come from something and have a beginning to be satisfied with this life and all the awesome randomness we come from.
