Today we're making the New York classic bacon egg and cheese sandwich. Or just simply BEC-SPK. The first job I ever had was working at a deli and I loved working the grill. I've made thousands of these and all their other variations over those 3 years when I was a kid. I hope you enjoy this bacon egg and cheese sandwich video!

4 strips thin bacon or 2 strips thick

From a Polish, New Haven CT resident to you, I admire your care for something as simple as the perfect breakfast sandwich. The water splash when melting the cheese is such an unnecessary yet next level move. The tri-state area has some seriously great eats, maybe the most underrated in the country. I watched the whole Sunday series as a clinic on Italian American food, and now I'm just working through the rest of your videos. You got a fan in me, bro.

Man, I love your channel. Not too much talking, great camera work and plenty of options for those who may not care for quantities or ingredients (e.g. “if you don’t like this much onion...”). You seem like a good guy, as well. If I drank, I’d say I’ll buy you a beer one day. Anyway, you’re doing great. Keep up the good work and don’t get all full of yourself.

best tip I know to keep eggs from sticking: dunk the spatula in cold water before trying to slide under the egg, they might've stuck but the steam releases the egg as the wet spatula slides under

Man, I already said it on another video but I can’t emphasize enough how much it means to see you sharing these moments with your son. My dad used to work at his father’s deli in Queens when he was younger. Now, 45 years later, he still makes those sandwiches like he did when he was a teenager. I would eat them at the island in the kitchen just like you do with your son. To this day, those are the best sandwiches i’ve ever had. Not just because the ingredients were good and the execution was perfect, but because they were made with love.

Great video. In Jersey, we'll sub the bacon with Taylor Ham (North Jersey) or Pork Roll (South Jersey). Personally, I sub out the Kaiser Roll for a sandwich size English muffin but keep the rest as is. It all works. Keep cooking! The Sausage Egg and Cheese is the other popular combination.

Hello. This video on the egg and bacon on a roll just brought back memories of being a kid and running to the dehli across the street to get that back in 85. U know , when sandwiches were 2.25, not like today. U hand the clerk 2.25 and he says oh no this 10 bucks. Say what?. Or when a slice was 1.25. I grew up in eastmeadow and still here. Anyway, thanks for bringing that memorie back

Nice love how you used the bacon fat again in the ham and eggs it’s really underrated. From NY and I never got the ketchup thing but a sausage egg and cheese can get right on top of a hangover.

I used to actually put mayo on the ones I'd make for myself. Then the customers would come in and mostly ask for ketchup.

This man really used three different pans to cook the bacon, ham, and egg 😂 You can use the cast iron for the whole thing tbh, and the bacon fat will carry on to the ham and eggs nicely if you play your cards right. You can even use a lit to another pan or pot at the end to steam the cheese, but considering the egg was already flipped I personally find that a hot egg is enough to melt a kraft single thrown on at the end, without the steam. I love the laid-back, non-gatekeeping approach to cooking this channel has!

Jim you are so right. The Kaiser roll is key. In Westchester, Cassone’s bakery in Portchester was the leading supplier. I went to high school with Don Cassone. The bad joke was always “Don needs dough”. The not funny truth, good luck finding a decent Kaiser roll in middle America

Just found this video at 11 at night. I'm from Staten Island and how we say it is "lemma get baconeggandcheese onna (whatever you want) everything bagel". Then you grab some cawffee. Simple as that. Best of the best.

The pan and rack you put your cooked bacon on is what I like to cook it on in the oven at like 325 convection (watch carefully, rotate pan every 5 minutes until done). I used to use parchment, but the baking rack gives a crisper result. I learned this in food service making bacon for 150ish people. You may not need to rotate that often if your oven is evenly temped. I learned this on a gas oven with a hot back and a cold front.

I cook bacon in the oven too. They don’t curl up. I do a whole package of bacon at one time and just freeze the extra, just a quick reheat either in the microwave or in a pan (gives off enough fat to fry eggs). If you cook the whole package of bacon in the oven, you get a lot of the fat which you can save and use for other cooking. 😁

I remember finally figuring out that it was just a new york thing. I swear i can live off of only bodega bacon egg and cheese forever. I live like an hour north of the city and every time i go down there for a few days, this shit is my entire diet

Nice job sir I liked how you dripped some water in the pan and basted the eggs...cripes 2 eggs each with a slice of cheese as well as the bacon and the ham....I might be hungry again at dinner time. Got my own creation to make tonight.A "Sizzler" cheese toast spam grilled cheese sandwich.

It's like therapy for me... cooking up egg sandwiches. I don't often have time in the morning so it's usually a late night snack. I'm a bit more partial to a nice chewy toasted bagel, but it doesn't get any better than that for simple comfort food. Make yourself some good eats and you can even wash the dishes by the time it cools down enough to scarf up... love the channel man. My Mom's side of the family is Italian but I've always felt a bit intimidated trying a lot of the recipes, you make it approachable and give me confidence. Instant subscribe here, thanks boss.

I love hearing about what you guys like to eat on the East Coast. As someone who grew up in Los Angeles, it's super interesting to me. I like having a fried egg sandwich every morning, but I make it myself with a bunch of hot sauce. Not sure if I can get onboard with the ketchup!! LOL

Most NYers do NOT get ketchup on their BEC. Most of us get hot sauce or nothing. And if you’re on Long Island, you probably get it on a bagel

at college in philly it was almost always on a hoagie roll, not a kaiser. had the perfect amount of chew. I always went for a pork roll egg cheese from the lunch trucks on campus (well, from some of them. you always ended up having a favorite truck, i'm sure you know how it is.)

hack for anyone that lives in an area with Food Lion grocery stores.. specifically the sourheast, where true NY/LI soft rolls are pretty much impossible to find. in their deli Food Lion sells rolls called 'bulkie rolls' that they bake in the store. pretty much everything else is awful but for whatever reason they nail it on the seeded rolls.

For anyone that happens to be scrolling about the comments, here's your little lesson of the day! The little balls of water he's talking about is actually a phenomena known as the Leidenfrost effect. It's when the disparity in temperature is so hot, and that the water evaporates so quickly, that the vapor actually *carries* the water, preventing it from making contact. after the vaper eventually moves away, the process repeats until there's no more water to evaporate. It even works with liquid nitrogen, because of how cold it is compared to a room-temperature surface. Have a nice day!

You can’t find NY deli rolls outside NYC. Yea you can find Kaiser rolls but they’re not like NYC. The NY deli roll has that slight chewy outside and soft pillowy inside. I’ve given up trying to find them and have made somewhat successful attempts to make them myself. In FL you can’t even find a local neighborhood deli. You’ll be lucky to find a decent deli in a strip mall.

Heaven!!! This is food for the gods! NOWHERE else can you get this magic morning meal. Add a 4 bottle of OJ and a hot cuppa coffee (regular) and you are golden and ready to work. But, I must insist on the last, and most magical, ingredient that makes this deli dish so delish: ALUMINUM FOIL! That's right. After it's all done, WRAP it in aluminum foil and put it in a paper bag and let it sit on your car seat for 5 minutes or so before you dig in. The foil seals in the heat and moisture and causes it to steam and become that special soft, chewy texture you can only get from a NY deli (German, if possible). Oh, and BUTTER/Salt & Pepper on the Kaiser roll.

I miss those! That roll is definitely the difference maker. Second place for me is an Asiago bagel. Bacon over ham for taste, but ham probably better health wise especially if you have these daily! Ha! This along with my coffee light and sweet at my favorite deli (in Carle Place) kicked off my day often.

@@SipandFeastDefinitely not daily, for sure. I read your pinned comment on the peppers and egg hero. That is truly a NY standard. I remember asking a deli in Boulder if they made those. He smiled and said, “Sure, we get a request for those often”. Boulder has many NY’ers being IBM has a rather sizable office there. It was quite good. Now, I just make them at home. My one son loves them, my other son isn’t a fan of peppers. His loss. Ha!

1 pan - Egg , bacon, cheese , hash brown Cook all in the same pan then toast the roll in the pan oil . Wash one pan. You’re welcome👍

At any take away shop in Australia we have 'Egg and bacon rolls' on the menu :) Our favorite Sunday morning breakfast. Also add fried sliced tomato with the cheese....delicious

Mmm, now I need one... preferably from my old deli at Flatbush and Ditmas. BEC and a coffee, "two milk, no sugar boss" and I'm good to go.

I like it. Personally I want a bit more color on those eggs. Probably easier when using the flat iron at the deli.. I usually use my cast iron for the eggs too. If it doesn't want to flip, it isn't ready.

Honestly most NY people or at least kids don't eat breakfast. I didn't I got dressed and went to school. Ps 102. Miss my old school soooo much. The best school I ever been in

Skip the frying pan, and cook your bacon in the oven on that rack you're using. 20 minutes more or less, at 400 degrees. You'll never go back to the pan.

I'm disappointed you didn't use pork roll, but it will do. Just move to TN from NJ so I'm going to have to order some online shipped frozen.

Outside of a NYC area we can’t get a good thin ham either UNLESS you can get Boars Head brand. Which I can’t. 😞😞😞

Toast the roll with light butter and scramble the eggs just to get it fluffy….. that’s NY style

So true about cutting yourself while cleaning the slicer. I would personally find dirtying four pans to make two sandwiches a little excessive but at least you are keeping the dishwasher in work.
