The Green Star was introduced this year after Michelin inspectors have become more aware of chefs putting in the effort to adopt sustainable practices within their restaurants. The new award commends those who hold themselves accountable for both their ethical and environmental standards, and work with sustainable producers and suppliers to avoid waste and reduce/remove plastic and other non-recyclable materials from their supply chain.
Where The Light Gets In was the only restaurant in the region to bag the new Green Star at last week’s Michelin awards ceremony, joining 22 other’s across the UK including the likes of Hypha in Chester and L’Enclume in the Lake District who were also recipients of the new award.
Since opening in Stockport, Where The Light Gets In has certainly led the way when it comes to sustainability, from growing fruit and veg on their own farm, sourcing sustainable meat and seafood and even growing herbs up on the roof of Ann Summers in Stockport Precinct!
