If you didn't use the same name "domain name" and you had whois guard on your domain then there is no way he can find any Shopify store or a website you own. Cheers

You need to turn on each testimonial first in the view all testimonials section

You mean product pictures or people's pictures ? use aliexpress or other shopping websites to find that product and check the reviews for pictures and use them. Cheers
