Seasoning the chicken UNDER the skin for maximum flavor! You have to be careful though, because the skin in some cases is very thin and can be easy to tear if you don’t handle it carefully. The key to a perfectly grilled chicken half is making sure you don’t overcook it and that you pull it at 160-165 at the breast or 175-180 at the thigh.
This chicken is also already injected since I’m doing a competition test run in this video. That injection recipe and demo isn’t in this video today but all the steps to cook it perfectly are. Let's fire it up!

Only thing I’d add is to only use a charcoal you trust when choking the bottom vent back that far, not the Royal Oak Super Size briquettes that almost died on me earlier but are on sale at Lowes, now 😂. Direct heat for at least part of a chicken cook is ABSOLUTELY helpful to getting crisp skin. Great video!

@ArnieTex I used your half chicken method with a traditional Pollo Al Carbon preparation last night. Let me tell you... This may be the single greatest chicken I have ever cooked to date! Seriously, seriously incredible. Served to my family with fresh pico and some pickled red onions. A nice achiote hot sauce on the side for good measure. Thank you again for your video as it is what propelled my cooking to the stratosphere!
