Hi there! It's my pleasure!! And thank you so much! ❤ If I remember correctly, the strands are about 12 to 14 inches long. I would recommend at least 10 inches or above because it's easier to handle with strands on the longer side in my opinion. Hope this helps! 😄

Using about 685g to 700g of dough will give you a nice sized challah for a 12 strand! I used around 685g for this one in this video! 😄

My usual recipe makes enough dought for 2 challahs, and I ususally do a traditional 3 strand braid for each one. If I'm going to use one of the methods with 6 strands to make a round challah, does that mean I just make skinnier strands -- or are these just much larger challahs?

I generally will use the same amount of dough and just make my strands thinner/longer. For me, I like to make mostly 4 challot from 1 of my batches, so if for 1 or 2 of them I were to make a challah with 6 or 8 strands, and the other just 4 Stranded challah, I will generally use the same amount of dough and not take from my other pieces of dough set a part for the 4 strand challah. But if I were to make 2 challot with like 12 strands, then I will take some dough away from the other pieces I plan on making a 4 strand challah with so that my 12 strand challots are not overly small and thin and keep it similar in shape and size as my challah with less strands. So each challah will not be much bigger or smaller when compared to one another if done this way. In this video, I happen to use a very small amount for first 2, similar to challah rolls rather than regular challah, but they can definitely be made as a regular sized challah. Hope this helps! In your case, what I would end up doing if it were me is just make the 2 challots with the same amount of dough I would use as a 3 strand challah and just elongate the strands a bit more. You have the right idea!

How does your dough have no elasticity?, my biggest challenge in braiding is that my ropes spring up. And you have no flour on the counter!

Hi there! The recipe I used for this video was an egg free challah recipe, so it tends to spring up less than an egg based challah recipes in which eggs would add more volume & stretch to the dough and baked outcome. So from my experience, I would say that egg free challah are probably easier to manage/braid in terms of keeping definition for more intricate braiding. Also, making sure proper rising time is critical as an underproofed/overprooofed braided dough can lead to over tearing, flatness, or loss of definition in the braids while baking. I also used all purpose flour in this recipe, which lends for a more tender dough and overall texture. With an egg based challah recipe, you will get a richer dough in color, texture & flavor and definitely more of a rise, but it does weigh down the dough a bit more. So I like to use bread flour when doing an egg based challah since it helps give it a nice chewy, stretchier bread texture and helps to get a pretty light bread inside & get those nice stretchy strands of the soft middle part of the challah when cut into! And if your dough is kneaded enough with just the right amount of flour, you're able to braid without any flour! I had already used some light flour when cutting the dough pieces and while rolling the strands out prior to braiding them, so after that, the strands were nice & prepped for braiding without the need for anymore added flour. Hope this helps! 😄
