Ox tails was my Pops (grandpa) favorite meal. I am from the mountains of TN and my Pop owned a pest control in DC and Baltimore. One of my favorite memories of Pop was him introducing me to oxtail! Thanks brother!

Les, I have been smoking ox-tail on the pit since 92. When you could buy a case for 25.00. I smoke the ox-tails until that candy red color and then wrap them in foil for about an hour. Tender ox-tails.

Im from Texas. I smoke them and keep them candy red while spraying apple juice until they get a nice dark mahogany color. Then I put them in a food tray and cover them with aluminum foil and they fall off the bone. Candy candy 🍬

YES!! You absolutely have to braise those oxtails to get ‘em nice and tender like that! Beautiful Job that you do day in and day out! Hard work and dedication 💪🏾 Edit: The oxtail has a lot of cartilage and connective tissue, so it needs to be cooked low and slow for a long time using “moist heat”. One such method is braising, which melts away all those sinewy bits and turns them into gelatin, yielding flavorful meat and a very rich and delicious sauce.

you do not have to submerge them in all of that broth. Put them in a pan with a little broth and cover it with foil. The steam from the little liquid will help them tender. If you like boiling the seasoning off the meat then go for it.

@bigred200222 no he smokes them to a eatable temp and finishes them by braising. I think what he's talking about not breaking down is the fat, the method your talking about he does that way also. When your making 1,000s it's just faster to do it that way. Like it's another guy on KZbin that only smokes them but I bet it's taking 2x the time to make them, there are many methods.

I'm sure they still taste good but the bark on the out side of the oxtail is gone when you boil it ,braising would help retain it . Same thing happens for brisket when they wrap it up

I know Les know his oxtails and they look magnificent but I also watch Walt over in California da Southern part and he smokes his on the pit all the way through it just takes way more time , they both are the Kings of Oxtails the way they do them but I also learned that Age and experience can never be discounted nor over looked!!!
