Recipe:
10g of Carmo & 170 g of soft mineral water (60 ppm total hardness) at 92 °C. Total brew time: 2’ 00”. Comandante x Ninety Plus grinder set at 16 clicks.

How-to:
Step 1: Prepare your water at a temperature of 92 °C. Rinse your filter with at least 200 ml of hot water to remove any paper taste, heating up your Origami x Ninety Plus Kone 10.1 dripper and pitcher.
Step 2: Grind 10g of Carmo using 16 clicks in our Comandante x Ninety Plus Grinder 10.1
Step 3: Empty your pitcher of water and place everything on your scale.
Step 4: Pour the ground coffee into the Kone 10.1 and tare your scale.
Step 5: Start your timer and add 20g of water in the first 10 seconds, trying to wet all your coffee grounds evenly, starting the blooming, using a circular pattern.
Step 6: Wait for 10sec, and at 20sec and up to 30sec, add 50g of water, for a total of 70g of water, using a circular pattern.
Step 7: Wait for 5sec, and at 45sec and up to 1min, add 50g of water, for a total of 120g of water, using a circular pattern.
Step 8: At the 1' 10" mark and up to 1’ 20”, add the rest of 50g of your brewing water using a circular pattern.
Step 9: Total Brew time should be 2’ 00”, where you should remove the Ninety Plus Kone 10.1 Dripper.
Step 10: Swirl, enjoy the aromatics, serve and enjoy your freshly brewed Carmo from Ninety Plus Innovation Line.
