Great video! Exactly what I was hoping to find after bringing local kipper from King Cove, AK back home to Texas, then running out. This video is clearly a lesson from the real deal! Just wish that canning video was up! Please post one!

You pressure cook your salmon for 110 minutes I put 1 tablespoon olive oil 1 tablespoon water 1/2 garlic clove 1/2 Bayleaf and one 1/8 tsp.of (spice of life) salmon spice you can add a pinch of cayenne pepper if you like a little more heat

Rather like your straight forward directions and precise measurements given. Very good tutorial. I know you don't want to smoke fish too hard when you're canning: they say the smoke flavor will get stronger as it sits on the shelf. Do you have any methods for a white meat fish?

Can you do the same thing with perfrozen salmon if you thraw them out??????

Yes, if I have no choice because of time etc. I freeze the salmon hole,of course you clean out the belly out at sea and then thaw them before I fillet. make sure to always remove slime and scales before filleting. I have a video on that. Thank you.

5:11 ; What about aluminum rack or covering my racks with aluminum foil? 😳My racks in my Bradley should be stainless My racks get little rust spots I got it used! 🤔 I know aluminum can be toxic! But we cook with aluminum foil all the time, so I figured it couldn’t be too much worse

Stainless steel is always the best aluminum does leave toxins behind, never ever use galvanized that is pure poison

If you cover your racks in aluminum foil, that does not allow air to flow around the meat, besides the toxins that leaves behind

Bruce I use the other chicken wire and it’s really dark with salmon oil and smoke.. does the stainless clean better or is it just new wire on the racks?

I clean my racks with a small plastic brush when needed. Please don’t use galvanized chicken wire sold at most hardware stores it is very poisonous. I had to order stainless chicken wire on the net. Sadly had to buy 100 feet but I now have a lifetime supply😀
