What temps can I get this smokehouse up to? Am I able to cook with this design at like 220*

This is a COLD smoker for lower temps.

would it be possible to put a metal plate above the fire to bake stuff, would that be warm enough?

This is actually a cold smoker meant for lower temps. That's why the fire is farther away from the actual building part.
