In this video, we're going to be breaking down an entire lamb carcass into roasts. I'll show you how to break it down from your own kitchen, with just a boning knife, a hack saw, and some butcher's twine.
This particular breakdown is for what we call a "Lamb Share" where a group of people coordinate to buy a whole lamb from a local farmer, have me break it down, and then they each get a quarter of the lamb for their household.
I'll be publishing a separate video on the rules of the Lamb Share, which can be used for any type of carcass (ie. cows, pigs, goats, etc), and how you can recreate one.

Very good Matt!! I wish we had some lamb or mutton shanks!! Im in metro Tampa, Florida,usa. Dont forget to mention the cure is .25%x the weight in grams= the amount of cure Or 1.1gram per # for the non metric measure. How about making a video on how to get onto U-Tube?? I have never been on but i want to!! Hope to see how you do it. I would use my cell phone.

The trick is to not work messy lol have containers ready for bones and scrap. I always have a towel ready to wipe bloody drips or smears too. Hope that helps! Thanks for watching honey roux! 🙏🙏🙏

Do you personally sharpen all of your knives? How often and using what method?

Don Betlej Hi Mr. Betlej, yes I sharpen all my knives with a tri-stone or multi-stone and mineral oil. If the knife needs a new edge ill start with the corse stone and then medium stone next. If its just a quick maintenance sharpening every week or two depending on use ill just put it on the medium stone. I only use a steel to hone, not a diamond or ceramic one as they cut the micro burs that creat the edge off the knife, and will eventually destroy the edge. When I sharpen/hone my knife I always seek the same angle on stone and steel, this is why as a professional one shouldn’t let others use your knife as the angle will always be slightly off and will dull/damage the blade quality. Does that help? I was going to make a video on this in the next couple of weeks.. :)

@@MatttheButcher Thanks. I've tried the manual multi-stone method (they're not cheap) but have always used water, never mineral oil. I never had great results however considering the effort. I just don't do it enough. Just like making wine, or bread, you have to practice, practice, but using the correct method, or else getting questionable result is what I have been experiencing.

Aaah , I do have a few tricks using the multi-stone that are pretty easy to pick up. But yes practice definitely helps, ive used old beater knives to really practice with and get the right pressure/angle. Also, the softness of the metal has a huge part in the pressure and process.

Hey Michael, I'd recommend looking at local farmers markets. Talk with the farmers, if they don't have any they should know who does. Next I'd call an actual slaughterhouse/processor and see if they'd sell whole. lastly I'd go to a local butcher to and see if they could get one for you. does that help?
