Never thought of putting a towel down, I always fight the fish sliding around. If cleaning a salmon or whatever I smack the back of the knife with a hammer to cut the tail/find etc. Just got a new smoker in the mail today, my other disappeared, and am back in business. Never smoked trout but will be since I'm on a diet and will take the time to filet with your method and use it for salmon also. Cheers

They make fancy filet mats if you don't want to ruin your towels :) Let me know how your fish turns out! Hard to go wrong with smoked trout and salmon, though!

I have a designated towel for separating leaves from huckleberries so I'm good. Yes I will let you know and still waiting for the razor clams to get in and will post on your chowder recipe as well. Peace
