You could apply it to any fruit and veggies. The ph or acid level is key in ensuring that the content doesnt go off tho.

Doesn't touching the underside of the lid with your fingers more or less negate the benefits of sterilizing the jar?

The hot liquid from the tomatoes is above 65°C(well above) which would kill any bacteria from the contact of his finger.

Assuming that's true, why sterilize the jar? Having canned for years, I've never come across a procedure that called for not sterilizing the lids along with the jars.

This method does not follow USDA home canning recommendations. After filling to the proper headspace, tomatoes should be water bath or steamed canned or, preferably, pressure canned. I would not recommend this for the general public.
