It’s so fun to have memories of doing garden stuff with loved ones. At the end of the season, my mom, dad and sometimes my grandma, my moms mom would gather whatever produce was left in the garden before fall, usually in September. They would wash the produce, chop it into smaller pieces and put it through an old fashioned grinder that they would attach to a table with a screw down crank. They would start putting the veggies into the grinder and they would fall into a large bowl. When they got enough or a bucket full. However much they wanted to can, mom and grandma would mix them all together. I didn’t pay that much attention, but I’m sure they made a vinegar solution with spices and I think mom added some hot peppers or hot pepper flakes to it. They put the ground up mixed relish in jars and added the vinegar solution and canned them. I’m not sure what it was called for sure, a pickle relish or veggie relish. You could put it on anything that you liked it on. Anyways, a good way to use up all your end of season veggies from the garden. When we went to reunions or family get togethers, family always wanted mom to bring some jars of it. They loved it. All of my mom and dads family’s are gone now, but we sure did have some fun family reunions back in the days. Everyone would come and it was so much fun playing with the cousins you didn’t get to see very often. Mom had 14 siblings counting her and dad had maybe 8 counting him. I’m not sure though.

I have a Hungarian heritage and make these slightly different, but sooooo yummy! I use Hungarian sweet wax peppers, stuff with cabbage and pickle it. So excited to hear someone else make this!

Yum 😋 all canning is definitely a LOT of work!!! But it's worth it! When i was a kid the lids would pop and my mom said "thank you!" I did it while teaching my kids to Cann as well. It's fun to hear them now say it to their bottles😁👍🤣

I thought this was only an Italian NYC thing 🤣🤣🤣 Yours look delicious. Love seeing Mom again! We use a tiny corer, and stuff half with mozzarella and half bleu cheese. We fill jars with olive oil and minced garlic and pepper flakes. Mmmmmhh yummy!

this is a difficult to find recipe. I'm from the south and many, many years ago a woman my family knew made something similar but with tiny green tomatoes stuffed with shredded cabbage. My family went nuts for them, and yours is the closest thing to that recipe I have seen. Thanx for your efforts, and BTW, thinking your work would be made so much easier if you used a $4 "Tomato Shark", ordered from Amazon. Happy creating !

Hi Kaleb, if they don't "seal" (i.e. the can lid doesn't pop), if you don't want to keep them in the fridge and use straight away, can you decant and reprocess them through another canning cycle in a fresh jar? Also, have you ever done the sweet bell peppers stuffed with cream cheese and preserved in oil?

You can reprocess the jar using a new lid. You don't need to replace any of the contents, or empty into a new jar. If it fails to seal a second time then there is probably a chip in the rim of the jar and it should not be used for canning again.

Unfortunately they have deemed dairy unsafe/unproven to can as shelf stable, but you could do them as a refrigerator version.
