I choose the loudest ones I can get. This makes troubleshooting them very easy. The big noisy ones can also carry more current. Starter solenoids are great for many other higher current applications. They are great for 4 kilowatt AC inverters, heavy duty clutches for under hood air compressors, under hood welders, train horns, underhood water heaters and water pumps, electrolysis water sterilisers, enormous 5 million lux flood lights, super focused 10 million lux spot lights, large radiator cooling fans, three battery starting and charging systems, 12,000 pound winches, heavy duty trailer brake electrical couplings, after market air conditioning system that will actually frost the windshield in summer, home made oscillating relay electric chair passenger's seat to shock people, and have a few extra circuits for what may come. I love relays.

Imagine a relay that idnt on or off, but uses a potentiometer to bias towards on-ness and off-ness. It would literally be like a super heavy duty mosfet/transistor.

Not exactly. It would act like a mosfet in triode mode (a variable resistor) but a transistor is more than just a variable resistor. In most contexts one wants a transistor to act as a variable current source. This is not the same as a resistor and is something a potentiometer can never do.

Go with a highest amp rating you can will be less likely to fuse shut

Adding a ceramic cap (~0.1 mfd) accross the contacts can reduce that effect too.
