It totally depends upon you. Cyber security is a vast field ranging from security architecture to secops to malware analysis to RE to edr experts to soc to grc to forensics to never ending. It totally depends upon which area attracts you the most. If you are a fresher as rule of thumb i would recommend you start with sys admin roles/network admin roles. So that you get to understand what system is and what misconfiguration are there in an enterprise environment.

actually i disagree with you on the topic of stabilty ,most companies also hire read teamer full time and about scope blue team has same roles but in different fields ,like network ,web app,cloud and system as same as red team exploits in same way but in various fielsds, most of diffensive approach are done in offensive security also like malware analysis ,log analysis,monitoring and vulnerbility assesment so dont be bias
