@RICH when using a blade that sharp there is no real pressure behind it. The knife is doing the work. Yes you can still cut you're self, it's just highly unlikely because you don't have any force behind it. When you are using a dull blade that requires you to put force into it, the likelihood of cutting yourself is much greater.

A trick I learned when cleaning salmon, drive a decent size nail up through the board. Push fish heads onto nail and prevents them from sliding. Might not work for everything but handy trick.

In my experience skinning them with pliers results in a "fishier" tasting meat. Leaving the fat and silver skin is what causes it. Fileting the skin off results in a more mild catfish. Just something I've noticed anyway!

Ive always just done one cut from below the ribs down through the tail and then came back for the shoulder meat. Never understood the point of wanting the fillets in one piece when you just chop them up anyways. Makes it so much easier to do a good job on that top piece.

We use the flays for dragging Bates. We found that if you keep the skin on there, you'll never get it off the hook. I'd use the same catfish piece as bait for least 12 hours.

Make sure when you skin the fillets to leave like 2 or 3 millimeters of flesh on the skin so you get rid of the brown fatty shit on the under side of the fillets otherwise little taste like dog shit. This dude didn't do it right and he's probably regretting it😂😂😂😂

Do NOT clean fish like this!! NEVER cut towards your hand!! You will eventually cut yourself! Going from the head to the tail is better so you have something stable to hold onto! Plus, she left a lot of meat on that fish. Slow down, take your time and fillet the fish properly! Be careful using a fillet knife! It will slice you like a razor blade!
