Good method man. About time I find a pin bone removal vid. I like to smoke my trout so the skin stays on. Thumbs up.

I smoke most of my trout as well or bake them, so I always like to keep the skin on and remove all the bones, unfortunately with a dull knife in this vid, it made it harder to get the pin bones out properly, you can usually cut them more on an angle and not reach bare skin but since the meat was pretty mushy I was kinda forced to do so.
