I like the salt you add. I've never done that but I soak in milk so it's not bitter - I skin the liver too

My mom always did this with chicken, but rarely cooked liver. We like liver, but never knew this step. Thank you for posting this, I’ll try it next time I cook liver. 😘

Since you asked, for beef liver I clean them by placing them in a colander, rinsing thoroughly, and blot with paper towels. I heard/feel that salt draws out moisture, so I don't typically season liver directly, but do season the flour when I smother liver, which is all the time!! 😂
