As a conducting/composition student, I can say that this video is good, especially what with your conversation with gustavo dudamel, but you would need a whole video series to really go over conducting. The possibility's for conducting are infinite. (Great Big Story still did a good job though, so I'm not hating or anything.)

Here is some things my orchestra teacher does; First, he pats his chest very quietly so we know the tempo He will (sometimes) lean a bit on his left for conducting He is a (sorta) shy teacher. So when making an announcement he doesn’t put the mic to loud He gives us a cell phone/food party even tho food is not aloud in orchestra

So, years ago I went to a conducting workshop (old band director here) and they told a story. To recognize music educators, the Chicago (maybe; large, major orchestra) invited high school band and orchestra conductors to lead the symphony. The program didn't last long because symphony musicians complained too much. It seems they liked the school conductors too much...

Coordinating how loud certain groups of instruments sound, how fast they are, reining in one's that go out of sync, etc. It requires sone really good hearing and understanding how it needs to sound at any given point.
