I know it’s been a year but I’ll still write the ingredients and how to do it Ingredients for 4 servings: 6 cups low-sodium chicken stock, or vegetable stock 2 tablespoons olive oil 1 shallot, finely chopped 1 lb shiitake mushroom (455 g), stemmed and thinly sliced 2 tablespoons unsalted butter 2 cloves garlic, minced 1 teaspoon fresh thyme, finely chopped salt, to taste pepper, to taste 1 ½ cups arborio rice (200 g) ½ cup white wine (120 mL) 1 cup grated parmesan cheese (110 g), plus more for serving ¼ cup fresh parsley (10 g), for serving How to do it: Add the stock to a medium pot and bring to a boil over high heat. Once the stock is boiling, reduce the heat to low or remove the pan from the heat and keep nearby. Heat the olive oil in a wide, tall pot over medium heat. Once the oil begins to shimmer, add the shallot and cook, stirring frequently, until translucent. Add the shiitake mushrooms and butter. Cook, stirring occasionally, until the mushrooms have cooked down. Add the garlic, thyme, salt, and pepper, stir, and cook for 1 minute, until the butter has melted and the garlic is aromatic. Add the rice and stir until fully coated in the mushroom mixture. Let the rice toast for 1-2 minutes, until fragrant. Add the white wine and cook until the wine has evaporated, stirring occasionally. Add 1 cup (240 ml) of the hot stock and stir to combine. Cook, stirring frequently, until the stock is fully absorbed. Continue to add the stock, ½ cup (120 ml) at a time, stirring continuously, until the broth is fully absorbed, for 15-20 minutes. Depending on how fast the rice cooks, there may be leftover stock. Once the rice is al dente, remove from the heat. Add the Parmesan and stir to combine. Top with parsley, Parmesan, salt, and pepper. Enjoy!

Risotto is one of those dishes that intimidate you, until you make it and it comes out tasting amazing. Once you’ve “mastered” it, you can make all kinds of risotto: wild mushroom and pea, shrimp with asparagus, primavera, I’ve even made a sweet dessert risotto with vanilla , rum, and orange zest.

i would recommend dry toasting the rice in a separate pan, with no oil or butter. if you don’t mind washing an extra pan afterwards it’s really worth the effort :)

do not do this the entire purpose of toasting the rice in the same pan is to coat each individual grain of rice with oil and toast it so that it cooks evenly and will absorb all the cooking liquid even faster and this isnt really the best risotto because it creates a mound on the plate a good risotto should flow along the plate

BlackHilt there’s a difference between toasting and frying. toasting the rice in a dry pan for 4-5 minutes gives it a nice nutty flavour and helps each individual grain keep its shape when cooking in the liquid. once in the pot with the other ingredients it will cook just as evenly. at least that’s what we do in italy! i do agree on the mound thing though

i agree with that but i feel that if you dont have much oil to begin with during the cooking of the onion it coats the rice perfectly and saves time but cheers on that too never heard of doing it that way

Matilde hmm I’m Italian and we definitely always toast the rice with the oil and onions, never dry. I guess it’s one of those where every family does it slightly differently. I swear my dad’s porcini risotto is the best risotto in the world ;-)

Just made it, it was delicious! Never thought I'd make something so good. I ended up making a couple of modifications: Added coriander to the mix with the cheese, used cheddar instead of parmesan (couldnt find it at the grocers), and ended up cooking for longer (28 ish mins for me to get it soft) and it was perfect!

I don't really add the water gradually, I just pour everything in, bring to a boil, cover the pot with a lid and turn off the stove...and then I wait for like 20-30 minutes...I kinda stir it a bit from time to time....and it always comes out perfect

Risotto is kind of Sub-Continent's 'Kichri'. Its mostly made when someone is not feeling well or needs a simpler dish. Second, it is close to 'Pulao' which is made with rice and meat-stock but without any creamy texture. Pulao is a novelty.

Ok, tried today and this recipe's result was good. Thank you. That was not mentioned but you need to be careful about salt. I used meat water, carnaroli rice and grana padano parmesan cheese. Since you need to use salt for extracting meat juice and parmesan gives little bit salty taste, little bit of salt will be sufficient. Also you need to use wine as little as you can use because it gives sour taste more than lemon juice. While cooking mushrooms, they will leave their water outside, you won't need so much wine actually.

I've been cooking this professionally for years. I learned a while back that its not that difficult and all of the stock can be added all at once. Try it, it works every time.
The chance is low to vomit up razor blades. They will get stuck in your throat if you manage to swallow them. I wouldn't recommend to exit that way. Throat damage can cause you to vomit constantly. Been there. Needed hospital due to throat damage from hard bread.

Wow, that looks so good! Thank you for the recipe 😍When I make mushroom risotto, I love sautéing a handful of mushrooms at the last moment with butter and parsley to add on top of my risotto. It makes everything look stunning and tastes delicious!

I tried your way. I still prefer mine. I start by cooking the rice in hot water for like 20 minutes. While the rice is cooking, I put some onions and mushrooms in a pot and add some butter. Let it turn to gold. After that, I add heavy cream to the pot and a few soya sous, black pepper, and salt. Then add the rice and start moving it with a big spoon to make sure it's all mixed. excuse my English lol...

Marilena Theodotou don’t do it until their consistency though, the rice should just ooze loosely and coat the back of your spoon lightly, once you add a touch of butter and parmesan, close your risotto and then rest it for 2 minutes and then beat it until it’s creamy (the parmesan will thicken it up) the one they make in buzzfeed looks way too dry
