The yam is similar to cassava. It is very tasty when cooked with salt or fried in oil after boiling it in water. The way we take the skin off is by cutting the yam in pieces like you guys did but instead of cutting the skin off the white flash, you do a long cut on one end and PEEL off the skin around the yam. Very easy and you dont waste any of that starchy yam!

I think brinjal is aubergine. There is a variety in West Africa called the ‘pear’ which is similar to the avocado in taste but very small and looks like a small aubergine. Garden eggs are different. They are quite bitter in taste and in Igbo land (in South Eastern Nigeria), we often eat it raw with a version of peanut butter laced with scotch bonnets or chilli pepper. Different regions and countries do different things. This brings back memories for me 👍🏽
