Chayote squash is pretty versatile in recipes. You can cook it simply by boiling and adding simple seasonings or in a more elaborate dish. Its texture is similar to a hard cucumber, green part of a watermelon or a zuchini squash. In its raw state, it's crunchy. You can add it into your salad dish or use in juicing. Chayote is great for pickling or fermentation as well. When freshly-picked it produces a clear and sticky substance when peeled. It comes off easily by washing.
